Why didn't you buy good ice cream?Originally posted by Moliere View PostI haven't made ice cream in decades since I remember it sucking, but I think a lot of the sucking is due to us wanting to use a shortcut method, which means a very poor base. Maybe I'll try the recipe above and see how it goes but it's hard to spend the time when I can just buy Blue Bell. I mean, I bought three half gallons of Blue Bell this morning for $5.95 a piece (homemade vanilla, choc chip cookie dough and moolenium crunch)As I lead this army, make room for mistakes and depression

I think you are the one that turned me on to Kroger Private Selection ice cream. That stuff is great.Originally posted by YOhio View PostLol. Blue Bell is awesome. I wish it were still sold in LV. The kids love making homemade ice cream, so I enjoy making it with them. In my very limited experience, most fruit flavored home made ice cream gets ice crystals the worst. I made strawberry ice cream last week that called for the strawberries to macerate for a couple of hours and then add during the last 5 minutes. But it's too much water content. The only fruit based ice cream I can get to stay creamy is banana.
Mostly I just make a vanilla base the day before snd chill it overnight. Added flavoring must be low moisture. We mostly use candy bar bits or Oreos. For Christmas we add crushed candy cane and Oreos.

The recipe I followed yesterday for strawberry called for one less cup milk than the normal base, which I assume was to compensate for the extra amount of H2O in the fruit. The strawberry mixture was added to the custard base while warm, then chilled overnight together, so it was all relative close to freezing point, which I guess is the secret to avoiding ice crystals. Results were good.Originally posted by USUC View PostThe kids love making homemade ice cream, so I enjoy making it with them. I, for one, appreciate LS's sincere and passionate defense of homemade ice cream. I may not fully agree with him, but I respect his conviction.Prepare to put mustard on those words, for you will soon be consuming them, along with this slice of humble pie that comes direct from the oven of shame set at gas mark “egg on your face”! -- Moss

I'll post updates after our next batch--which I promised to my middle daughter would be Nutella."Seriously, is there a bigger high on the whole face of the earth than eating a salad?"--SeattleUte

Thanks for the reminder, LS. We haven’t done this with the kids in years and happen to have some leftover cream in the refrigerator. It may be a homemade ice cream weekend in the Public household.Originally posted by Lost Student View Post

Homemade ice cream can be much better than store bought but it’s expensive. It’s fun to do for special occasions but it’s not quick and simple. I’ve got a great ice cream freezer that was in the $200 range. I use recipes from David Lebovitz Perfect Scoop. Toasted Coconut with homemade Dulce de Leches is my personal favorite. Lots of great recipes and the texture comes out as smooth and creamy as any premium store bought ice cream. It just costs about 5x and is a lot of time and effort.A man who views the world the same at fifty as he did at twenty has wasted thirty years of his life. - Mohammad Ali

We made the “decadent chocolate ice cream” from our machine’s instruction booklet:

It turned out great, and the kids were excited and engaged. We whipped the remaining cream for a topping. Smiles all around."What are you prepared to do?" - Jimmy Malone
