    German potato salad is dressed with a vinegar/oil combo instead of mayo/salad dressing. It's a delicious, lighter variation on the potato-salad theme. I've made this recipe before, and really enjoyed it. If that one doesn't sound good, you'll find hundreds of recipes by simply googling "german potato salad".

        I'd like to try it. I may skip the ramen noodles, but I like to try new things with different vegetables.

          Yeah, I'd eat that. Normal potato salad makes me puke - all the more so because everybody insists on using Russets, which (IMO - sorry Idaho!) are little better than elephant turds for human consumption, unless baking. New Pontiac Reds, fresh from the garden, boiled skin-on, drizzled with parsley butter - that was a traditional harvest-time feast when I was a kid.

            please do. this thread will be most helpful if we post recipes. I'm interested, as well. Like you, I am not a huge slaw fan.

              I forgot to add an ingredient. Vinegar. White Vinegar is what we use.. You could probably use whatever you want..

                Cabbage Ramen Noodle Salad
                2 Tbsp toasted slivered almonds (if we have these we use them if not we don't)
                ½ head cabbage, thinly sliced
                ½ pkg. Top Ramen noodles, uncooked, crunched up (we usually do the entire package since we've used the seasoning and we also usually add the noodles early on since we prefer the noodles to soften some)
                Dressing:
                2 Tbsp. sugar
                1/2 c. salad oil (vegetable oil) - Could substitute with other oils (Olive Oil or Sesame Oil etc..
                3 Tbsp. vinegar
                1/2 tsp. pepper
                1 tsp. salt
                seasoning pkg. from Top Ramen

                Preparation:
                1. Mix slivered almonds and cabbage. Add dressing (refrigerate a few minutes before).

                2. Add dry Top Ramen at last minute (we don't do this but if you like crunch go for it), just before serving. May add cooked, chopped chicken or shrimp for variety.

                        One that I LOVE to make is an Avocado Salad..


                        2 avocados - peeled, pitted and diced
                        1 red onion, chopped
                        1 red and yellow bell pepper, chopped
                        1 large ripe tomato, chopped
                        1/4 cup chopped (Very Fine) fresh cilantro
                        1/2 lime, juiced
                        salt and pepper to taste

                        I also add some Olive Oil to the Lime Juice..


                        It is simple and easy but I love the taste of it...

                              Yum. That sounds like a delish twist. Glad you enjoyed the recipe. The coating is a pretty simple recipe, but it tastes very good. Out of curiosity, did you adapt any other parts...adding pickles, olives, etc? Or did you keep it as posted?
