Buffalo Wings....what is the best way to make them?

    Reporting back. My kids weren't sure about it after I gave them just the tiniest drop of sriracha sauce to taste while I was making the sauce, but we gobbled up 20 wings in no time. This was my first time grilling wings, and I think it was a success.

    Ingredients all ready to go:

      those look awesome. how did they taste?

      45 mins on the grill.....I can see why people deep fry...much faster prep time. However, I think the grilled way is better. No oil.

        I thought they tasted great - a nice blend of mild heat and sweetness. I'm looking forward to using different flavors of marmalade or jam for some variation. This recipe called for orange.

        The total time from beginning to end is long, but for most of that time the wings are unattended on the grill. They are really quite easy.

          Glad you and your family enjoyed them. They are a favorite at our house. I cooked mine indirect over a charcoal fire and added some small chunks of apple wood. It added a nice, light, smoky flavor that I really enjoyed.

            What was the rub you used? I can see it is one of the McCormick rubs, but I can't tell which variety. Does anyone have the recipe for the Wolfes Citrus Rub referred to in the bbq forum?

              I don't have the recipe for the Wolfe's Citrus Rub, but you can buy it here: Larry Wolfe's Blog

              I personally used "Old Bay" seasoning and it worked great.

                I don't have the Wolfe rub either and didn't want to pay $20+ to get the recipe. I just looked on the grocery store shelf for a poultry rub with some citrus flavor. I don't remember the brand name of what I ended up with but you can see the packaging in my first photo. I believe it's a nationally available brand.

                  When you threw these back on the grill after letting them sit in the sauce, how long did you do it for? I read the original recipe you got this from and it made it sound like you do if for the same amount of time as before you put them in the sauce.

                  By the way, I am going to try this. They look great. I love wings.

                    I grilled the wings for 45 minutes at 350, dipped and grilled for 15 min then dipped and grilled for 12 more minutes. The wings were NOT burned at all but I think they were just slightly overdone.

                    The next time (this Saturday), I'm going to go with 40 minutes, 12 min and 12 min.

                      Cool thanks for the advice. I might be trying them this Saturday. We have family coming over Saturday night and I might try doing 25 to 30 wings as an appetizer.

                        You were using propane, correct?

                        I wonder if it is easier to simply go the oven route for the 40 minutes, then to the grill for the 12 and 12, a la the rib receipe that cowboy and Jeff Lebowski have shared? was there any noticeable benefit in flavor by grilling? It seems that with the wings, since they are so drenched in sauce, you are mostly going to taste sauce (although deep fry would undoubtedly infuse some distinct flavor)...I don't know, I am just asking here.

                          Since you are cooking them indirect, there probably would be little difference if you did the first 40 min in the oven compared to a gas grill.

                                Buffalo Wings

                                Today I grilled buffalo wings. I'm glad that I didn't bother to buy a fryer as I don't feel like I'm missing flavor with the grilled wings, and I'm sure they are much healthier.

                                First the rub (I used half these amounts and still had more than I needed for 24 wings):
                                6T paprika
                                2T black pepper
                                2T salt
                                2T sugar
                                1T chili powder
                                1T granulated garlic
                                1T onion powder
                                1t cayenne pepper



                                The sauce was 1/2c Frank's Original Redhot and 1/2 a stick of butter. I also added 1T brown sugar, but I think it was a little too sweet. I would use 1/2T brown sugar or maybe none at all.




                                Then I grilled at 350 deg, this time I had them on the grill a total of about 40 or 45 minutes.



                                I put the grilled wings in a large ziplock bag with the sauce and mixed everything together.



                                I was really happy with these buffalo wings. They were spicy without being overly hot. A lot of flavor.
