I love the fatty! I was thinking about doing one of these. It looks like you beat me to it. I have seen a few with some onions and jalapeños and cheese in the middle as well. I appreciate your weaving ability.

Pellets? Time and temp? This looks like something that is crazy and fun to make. I assume it is an appetizer of some sort? not an actual main course?

Hickory @ 225 so far. Looks like it will take 2.5 hours. I wanted to do a brisket, but when I went to Costco, they didn't have a packer. So yeah, this is it for today.

I was just at the store picking up ingredients for tomorrow's chicken cook and I was sorely tempted to pick up some stuff for a bacon explosion this evening. I had to rush out of there quickly.

I didn't want to rain on your parade. They look a lot better than they taste in my opinion. Fun to try, but once was enough for me. Like you, there are lots of other things I'd rather smoke.

More work than it is worth and the flavors just aren't there. I am sure Adam Richman would love it.

I think that is the perfect description. Yours turned out beautiful. Fun to have done it once, but once is more than enough.
