    Once upon a time, the I/O secret menu was actually secret. Or at least a word of mouth thing. Now it's a google search away. Hardly secret.

          Good luck with I/O; if you want a decent green chile cheeseburger you got to come to New Mexico, and there are no I/Os in New Mexico. But I have always wondered what the big deal was with I/O. They are good, but we have a dozen establishments here locally that would put I/O to shame on preparing a good green chile cheeseburger.

            Because it's a stretch to visit the ABQ just for a good green chile cheeseburger?

            I agree. You have some great establishments down there--Route 66 among them--but the food's the best attraction I've found in NM thus far.

                I would love to try a good green chile cheeseburger in New Mexico. I don't doubt that is an amazing experience. However, this is not a green chile cheeseburger and is not pretending to be one. It is a cheeseburger with chopped chillies on it. It is yellow pickled chopped chillies added to the burger.

                      I spent the afternoon in a beautiful hotel in Santa Fe next to a roaring Kiva fireplace eating blue corn enchiladas topped with red and green chile while watching the snow capped peaks of the Sangre de Cristo (Blood of Christ) mountains turn to red, justifying their moniker, without any hint of an inversion to obscure the mountain view. If you really want to find some great attractions in New Mexico, just ask me. I admit there are places here that are unattractive, as there are everywhere, but sometimes this truly is the Land of Enchantment.

                        Yep, if your experience is Tex Mex or what Arizona passes off as Mexican food. But if you are talking "New Mexican food"; dude you are sorely mistaken.

                          What are some traditional new mexican dishes? I've had those sopapilla things. I've had green chile burgers (not sure I agree that they are the be-all end-all of burgers). I've had a bunch of stuff that had the word "chipotle" in the name. What is the good stuff that one should try?

                            Well for starters, green chile on burgers should always be fresh, not canned. I've been to establishments outside the state where they use canned green chile strips on a burger - that, quite frankly is horrible. Dishes that are pretty uniquely New Mexican that I love to eat are blue corn enchiladas, fresh pinto beans (not refried beans and not black beans), posole, stuffed sopaipillas, fresh home made tamales (no prepackaged stuff), calabacitas (Indian squash with green chile), green chile stew, carne adovada (pork marinated in red chile), chicharonnes (again, fresh, not processed) and in addition to great green chile cheeseburgers, we make killer breakfast burritos here - my favorite is a burrito stuffed with eggs, potatoes, beans, chorizo sausage and smothered in green chile.
                            BTW, we don't really do "chipotle" very much here; that's an import. Our chile of choice comes from the fields of the Rio Grande Valley in Hatch where the chile is New Mexico green and Big Jim green.

                              out of curiosity, you are aware that these are not uniquely New Mexican dishes, no? These are pretty standard Mexican fare. No wonder you love the food so much....you are describing good authentic Mexican food (but not New Mexican food).
