I second this. My friend was the manager at the Chef's table in college, and he would bring us this soup after work sometimes. YUM!

I think you should do something totally avant-garde. Make a statement about your individuality and power of expression. Try this recipe I'm working on developing:

          Water Soup

          Ingredients:
          - 1 liter water

          Cooking instructions:
Over a high heat, bring the water to a boil. Remove from heat and let stand for 10 minutes before serving.

I love this recipe! Best ever! 5 stars. I've made just a couple changes to fit our family's preferences. I add one can of Campbell's Chicken Noodle right before Step #1 or sometimes I just throw in a package of Ramen when we have leftovers in the pantry. Thanks!

If you have time Ox tails make a really good beef soup or stew. It takes about 4/5 hours of simmering to be able to take the meat off of the bones.

                    Here it is:

                    Creamy Butternut Squash Soup

2 pounds of butternut squash halved, peeled, unseeded and cut into 1 inch chunks
1 1/2 cups of diced onion
                    2 carrots peeled and diced
3 cans (13 3/4 oz) chicken broth (about 5 cups total)
                    1/2 tsp salt
1/4-1/2 tsp pepper (To your liking)
                    4 tbsp (1/2 stick) Butter
1/2 - 1 cup light or heavy cream (depends on consistency of soup you like we like heavy thus more creamy)
1/4-1/2 tsp ground nutmeg (freshly ground if possible - we never have fresh)

We boil the squashes before we peeled them and added them to the large saucepan/soup bowl. It made it much easier to peel and then we added it to the soup and simmered it. The 45 minutes was mainly to soften the squash, so you could simmer it for less.. But if you want to follow the directions they are listed below.

In a large saucepan, combine squash, onion, carrots, broth and salt. Simmer, uncovered until squash and carrots are very tender, about 45 minutes or so. Puree soup in a blender or food processor (or if you have one another option is a hand blender). Add the butter, then whisk in the heavy cream. Taste and season with pepper, freshly ground nutmeg and a little more salt if needed.

Serve with a dollop of sour cream, if desired (we've never done this)

                    Enjoy!

                        happyone,

Your potato soup last night was a huge hit.

My MIL is stealing the recipe.

I dug it though. You can pretty much add anything to it to make it another type of chowder.

I am going to start venturing out into some more soups now. This one kinda took away the fear factor a little.

Fear of soups. What else are you afraid of, snuggling up with a blanket and a good book on a rainy day?

Thanks to all for the suggestions. After all that my wife found that she had a couple pounds of italian sausage in the freezer so we went with what we had. This turned out to be a very good recipe, by the way:

Actually, I was afraid of eating soup while wearing a blanket. The snuggie has alleviated that fear.
