  • The official soup thread

Yesterday I made a pretty damn good soup with the leftover ham bone from our Christmas feast. It was a honey ham, so the broth ended up being refreshingly sweet, in a french-onion way, but also had good depth and spice. Aafter searching for ham-bone soup recipes online and not finding any to my liking, I made up my own recipe. Also, it was done in the slow-cooker, so it took about 15 mins prep time and that was that.

Recipe for those with a ham bone in their freezer:

Set aside 2 cups ham, cubed.

Put ham bone in slow cooker. Add:

    1 cup chopped onion
    3 cloves garlic, minced
    16 oz. chicken broth
2 cans great northern beans, drained
1 14 oz can peeled, diced tomatoes
    1 bay leave
    1 Tbsp dried sage flakes

Set slow cooker on low for 8 hours.

With 2 hours left, stir in:

    2-cups ham, cubed
    1 Tbs chili Powder
    1 Tbs crushed red pepper

Top with freshly-grated Parmesan. Serve as soup, or over rice as a sort of gumbo.

It's nothing complicated, but it turned out quite nicely.

Wait, there's still meat on that bone. You throw it in a pot with some broth, you got yourself a stew, baby!

      I need a soup

I'm getting together with my siblings and their families on Sunday and we're all bringing soup. This is good because I've been craving some good soup so I want to bring a really tasty one.

Any ideas are welcome, but I'd prefer to find a cream soup rather than a broth soup, but not a really thick one. Does that make sense?

Oh man, my wife made a vegetable chicken soup this weekend, it was really good and I don't like soup very much. I'll hit her up for the recipe.

Cream of Potato soup is always a hit at my house.

          3-4 lbs potatos cubed
1 stalk celery minced - my kids don't like celery and this hides it a little
          1 carrot minced
          1/2 onion minced
1 tsp bacon fat ( any other oil will do )
          1/2 lb ham cubed (optional)
1 qt chicken stock or broth - enough to cover the potatos( I use Swanson's low sodium)
2 cups canned milk ( can subsitute cream or half and half )
          salt and white pepper
          roux
          ( 1/4 c flour and 1/4 oil - I use a mixture of butter and bacon fat)

saute the onion, carrot, and celery in the bacon fat, in a 5-6 qt dutch oven. When soft add chicken stock and potatos. Simmer potatos until done (about 15-20 minutes). Add canned milk and ham (if desired) and bring back to a simmer. add salt and pepper to taste

Thicken with a roux to the desired thickness.

garnish with grated chedder cheese, parsley, bacon bits (if ham is not used)

I may be small, but I'm slow.

A tomato bisque. Hey JL didn't you have a good tomato soup recipe? I love the fire-roasted tomato soup at Paradise Bakery.

Cream of Asparagus. Not only is it VERY tasty, but it's the gift that keeps on giving. Next time you pee, you have a nice reminder of the wonderful soup you ate!

I'm not sure how easily duplicated this recipe is, but the Tuscan Tomato is fantastic at Chef's Table:

I have made this parsnip soup a few times. It's a hit each time. Fits perfectly with your "creamy but not too thick" request.

I love Market Street Chowder. When mrskccougar and I were poor students we would go to Market Street and make a meal out of two bowls of chowder a crab-stuffed mushroom appetizer, and sourdough bread. Yummy.

Probably no worse than the supermarket tomatoes.

We typically make it with fresh romas from home. Give it a shot.
