  • Turkey Day Dishes

    So my wife and I were asked to do a dish at the family Turkey Day festivities next week. I thought it would be a good idea to ask CUF for some ideas. Maybe we could all share a cool Turkey Day recipe that has some traditional things to it however might be a little different that some might want to try. Just looking for something new to share with the fam this year that has sign off as being good from one of our CUF brethren.

      my wife makes a mean cranberry sauce (canned cranberry need not apply), sweet potatoes, and she is now an ace at homemade pies (something she has been practicing). I will have to ask her for some of her recipes to post.

      A couple of years ago on CB Bern posted a recipe for homemade rolls. Delish and simple. We have used his recipe and enjoyed it. I will dig that up, too.

      Since we are sort of getting into the flow here, allow me to make a special recipe request: does anyone have a good recipe for a yummy punch-type holiday drink (non alc, sorry!)? A Y Sparkle, if you will, but NOT Y Sparkle? Usually people are mixing sprite with ice cream or whatever. I have been in the mood for something along those lines. I went to a wedding reception recently and they had this wild punch stuff with crushed strawberries and other fruit floating around in it......it was so good, I wanted to inject it into my veins. I had no needle so I had to settle for smoking it off a metal spoon. Tasty.

        Butter Pecan Apple Pie...as long as desserts count. I found it in the Casper Tribune in 2000 and my coworker insisted I try making it. It took me a few times to get it just right, but it has become one of our favorites:
        Butter Pecan Apple Pie
        Filling
        6 cups thinly sliced apples
        2 tablespoons lime juice
        ¾ cup sugar
        ¼ cup flour
        1 teaspoon cinnamon

        Pastry for 9” double crust pie
        2 tablespoons butter

        Topping
        8 large marshmallows
        ¼ cup evaporated milk
        1-1/2 cup chopped pecans
        ½ teaspoon vanilla
        2 Tablespoons heavy cream
        ½ Cup brown sugar

        To make the filling: In a large bowl, toss apples with lime juice. Combine dry ingredients. Add to apples. Toss lightly. Place bottom pastry in pie pan. Fill with apple mixture. Dot with butter. Cover with top crust. Flute edges high. Bake at 400 degrees for 40 to 45 minutes. Remove from oven.

        To make the topping: Cook sugar, ½ stick of butter, marshmallows and ¼ cup evaporated milk over medium heat until butter is melted. Add 1 cup pecans. Cook until softball stage or 236 degrees. Remove from heat. Add vanilla and beat until mixture is thickened. Drop onto greased wax paper or non-stick cookie sheet spayed with vegetable spray. Let cool completely. Crumble and set aside.

        In medium saucepan, sauté remaining pecans in ¼ cup butter. Butter should be rich and golden color. Add pecan crumbles from above. Remove pieces from butter. Add ½ cup brown sugar and cream. Cook until boiling. Add sautéed pecans to boiling mixture. Pour over pie. Bake 3-4 minutes until bubbly. Cool 30 minutes.

        6 apples (Jonathon, gala, honey crisp, Cortland, Jonagold, Melrose, Fuji, Goldrush, Granny Smith)
        1 lime
        sugar
        flour
        cinnamon
        Pastry for 9” double crust pie
        butter
        large marshmallows
        evaporated milk
        3 cup chopped pecans
        vanilla
        heavy cream
        brown sugar

          more of an easy picnic punch that gets lots of good comments...2 Two liters of Strawberry Soda and 3 gallons on Country Time Lemonade. Obviously this could easily be dressed up a bit using real lemonade etc.

                bake the yams, peel, cut put in a dish with butter, brown sugar, nutmeg & cinnamon, top with marshmellows. Heat to brown the marshmellows.
                I have been thinking about tweaking my simple recipe for some time, but this has been so popular that I fear the reprocussions of upsetting the apple cart. My mom used to put nuts and occasionally cherries in the yams. Anyone have other recipies
                FWIW my wife and in-laws hated yams before I started making them. I guess they'd just dump them out of the can and warm them up...what a shame.

                  do you mean sweet potatoes? I find that people often say "yam" when they mean sweet potatoes. Yams are not common in the US.

                          My fitday goals have been modified now that I hit my target cholesterol goals. I still mostly drink water but I will partake of a juice or a punch now and then. I can't remember the last time I drank soda. It has been months and even then, I think it was part of an ice cream float.

                          On Saturday mid-mornings I take the kids to get donuts. This past Saturday I ate an apple fritter!

                            Hot Spice Punch

                            5 quarts water
                            1/2 cup lemon juice
                            1 tsp ground cloves
                            12 oz. can frozen OJ
                            2 sticks cinnamon
                            1 large can pineapple juice
                            4 cups sugar

                            Boil water, sugar, cloves and cinnamon together for 5 minutes. Reduce heat to simmer, add lemon, orange and pineapple juices. Heat together 5-10 minutes. Serve hot.

                            Serves 30.

                              I will post my "Corn Bread Stuffing" recipe tonight. We did it last year and it was really good. I am going to do it again but need another one to try this year. Keep them coming.
