Pumpkin Bread

My daughter and I are going to make pumpkin bread for my home teaching families. Does anyone have a good (and kind of easy) recipe to recommend? We're going to need one medium-size loaf each for 5 families.

Actually, raisins are much better in pumpkin bread.

Here it is. She said that it is actually a modified Lion House recipe, so you can feel comfortable knowing that the LDS Church has a loose affiliation with this bread.

1 1/3 C vegetable oil
5 eggs
1 16 oz can pumpkin
2 C flour
2 C sugar
1 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp baking soda
2 3 oz. packages instant vanilla pudding mix
1 cup chopped walnuts

1. Preheat oven to 350
2. Combine oil, eggs and pumpkin in a large mixing bowl and beat well
3. In a separate bowl, sift together flour, sugar, salt, cinnamon, nutmeg, and baking soda.
4. Add dry mix to pumpkin mixture and blend
5. Stir in pudding mix and nuts
6. Pour into greased 4.5 x 8 inch loaf pans
7. Bake for 1 hour

Makes 2 loaves

Part of the recipe provides canned pumpkin as a substitute, but there is also a way to extract from an actual pumpkin...a la the natural method. You wanted an easy recipe and the natural pumpkin method takes awhile and is really messy. I made an exec decision on that one and simply gave you the canned pumpkin requirement.

Also, when she adds chocolate chips, she nixes the walnuts and mixes in 1 cup of chocolate chips. You can experiment with whatever, I suppose, but she did say to be careful adding too much into your bread because it can weight it down and affect how it bakes. I have no idea what that means but I trust her judgment.

Is that a personal preference, or is there something about raisins that harms the recipe? Or is this just a warthog faced buffoon thing?
