I'm late to the party, but I agree with Trip the Dad that the Johnny Cash covers are terrific. Some are haunting, some are fun, and most all are good.
Here are a few that I like.
Ben Folds covering a Dr. Dre song with a naughty title. This is not for the sensitive ear. Seriously, a ton of foul language. Unless you have listened to rap, don't listen to this. You won't get it.

A great Hendrix cover by Garage a Trois. Garage a Trois is one of my favorite bands. It has 3 of the greats in jazz right now in Stanton Moore, Charlie Hunter, and Skerik.
Charlie Hunter is of particular interest in the group because he plays an 8-string guitar. He has 5 guitar strings and 3 bass strings. He is absolutely amazing in the sound that he gets out of the thing and his ability to play bass and guitar tracks, plus mimic a Hammond organ. You would think it would end up being nothing but a parlor trick, but the guy is fantastic. One thing about covers, I'm not a huge fan of the studio covers but love the live stuff like this.

Another one I really like is Dream Academy's cover of the Smith's, "Please, please, please, let me get what I want." A lot of bands have covered that song, and most have really sucked. I believe they used the Dream Academy version in Ferris Beuller's Day Off when Cameron is staring at the painting in the art museum.

I saw June and Johnny perfrom this once and they glared at each other the whole time, for just that song. Otherwise, the concert felt like a good timey old-fashioned Carter family reunion, but during that song they kept glaring.
