The way I see it we have two rivals now. And you still have us, and you could maybe add Idaho or say San Jose St. if you really wanted to.

I disagree. The game will be intense and meaningful this year, however as the years go on Utah will learn that the Pac is about going to the Rose Bowl and winning or losing to BYU doesn't have any impact on that. I see what you are saying but I disagree. Florida-Florida State seems to have held on as a rivalry despite those teams going their separate ways. Ute fans claiming they will no longer care about BYU are simply trying to diss BYU and are (ironically) showing how much they actually do care. We'll still want to beat each other. Surely your optimism leads you to understand while some sort of a rivalry will develop on the playing field, the visceral hatred between fanbases will never materialize in anything resembling that between the two intermingled, intermarried, (and each would call the other inbred) Wasatch Front fanbases.
We will develop fun rivalry relationships in the PAC-12 but I don't expect a Utes vs Cougars, Red Sox vs Yankees, Lakers vs Celtics, Jews vs Palestinians, (indeed a CU vs. Nebraska) style conflict over any of them.
