  • Recipe for Breakfast Casserole

    We have to bring one to the ward Christmas party tomorrow and my wife told me last night that I am charge of doing. I have never made one and I don't even have a recipe for one. If anyone has a good one they don't mind sharing I would appreciate it.

    I have looked on line and found many but wanted to make one that someone has actually done and recommends. They don't look like they are to hard to make.

    I have one that I absolutely love. Do you seriously want suggestions?

    What kind of breakfast stuff do you like, though? This one is basically a french toast casserole, with berries and cream cheese mixed in.

    Alternatively, if you're wanting a ham and hashbrowns sort of thing, I've got a great recipe for Spam casserole!

      Yeah I seriously do want one but I was thinking more along the lines of eggs, sausage and hash browns. Your casserole sounds pretty good though and my mind can easily be changed on the type of casserole that I am going to make.

        Gidget made one not too long ago. It was a Paula Deen recipe. Wasn't too keen on it, not Gidget's fault.

          Guys, what the heck is a breakfast casserole? Sounds delish, but I have never had one. And I lived in Utah for 10 years.

          BarbaraGordon, please post both of the ones you described. I want to try them.

          do you guys make homemade hashbrowns? It takes longer, but they are so good.

            I personally love Chilaquiles. It's a Mexican dish that's essentially a breakfast casserole.

              Paula Dean's Hashbrown Casserole
              Ingredients

              * 3 tablespoons butter
              * 1 small yellow onion, chopped
              * 4 cups frozen shredded hash browns
              * 1 pound bulk sausage, mild, hot or sage
              * 2 1/4 cups whole milk
              * 8 large eggs
              * 1 teaspoon salt
              * 1/4 teaspoon black pepper
              * 1/4 teaspoon freshly grated nutmeg
              * 2 tablespoons Dijon mustard
              * 8 cups cubed French or Italian bread, crusts removed
              * 2 cups (1/2 pound) grated Cheddar
              * 2 cups (1/2 pound) freshly grated Parmesan

              Directions

              Preheat the oven to 350 degrees F.

              Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray.

              Melt the butter in a large frying pan. Add the onion and saute over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart. Saute until soft, about 5 minutes.

              In a second frying pan, saute the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan.

              In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard, briskly to blend.

              To assemble, spread the onions and hash browns evenly at the bottom of the greased dish. Place the bread cubes evenly on top of hash browns. With a slotted spoon distribute sausage as the third layer. Pour the milk and egg mixture over these layers. Add Parmesan as the next layer, while then adding the Cheddar.

              *Cook's Note: Save a few tablespoons of Cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted Cheddar.

              Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown.



              Paula Dean's recipe needs less bread or no bread. The bread just got soggy (although I hear that is the southern thing, but not for me). I think this recipe would be good without soggy bread, and a nice smoked sausage.

                Homemade hashbrowns are good for frying, but I don't think they always work in casseroles, they can end up basically seeming like you stirred in mashed potatoes with your casseroles. I recommend Ore-Ida frozen shredded (this is my personal fav)

                  Here is the casserole my wife made last year for christmas:

                  INGREDIENTS (Nutrition)

                  * 6 baking potatoes
                  * 1 pound ground pork sausage
                  * 2 tablespoons butter
                  * 1 onion, sliced
                  * 2 teaspoons seasoning salt
                  * 1 cup shredded Cheddar cheese
                  * 12 eggs, lightly beaten
                  * salt and pepper to taste



                  DIRECTIONS

                  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
                  2. Prick potatoes with a fork, place on a medium baking sheet, and bake 30 minutes, or until tender but firm. Remove from heat, cool, peel, and cube.
                  3. Cook and stir sausage in a medium saucepan over medium heat until evenly browned; drain.
                  4. Melt butter in a large saucepan over medium heat. Stir potatoes and onion into saucepan, and cook until potatoes are browned and onion is tender, about 10 minutes. Sprinkle with seasoning salt. Place potato mixture in the prepared baking dish. Cover with sausage. Sprinkle with cheese, top with eggs, and season with salt and pepper.
                  5. Bake 30 minutes in the preheated oven, or until eggs are fully cooked.

                    Don't use the bread in Paula Dean's recipe. Doesn't need it and it's nasty. I think instead of smoked sausage I'd prefer something with a maple infusion.

                        ** If you can't find fresh chiles de arbol, you might use 1 fresh jalapeno and 1 fresh serrano pepper instead.

                        You might also try putting some Queso Fresco crumbled on top with the onions when serving.

                            There are different versions of chilaquiles and I'm sure there's a recipe or 2 out there that uses meat, but this is an authentic southern Mexico version that's been around for years and years and years.

                            Coincidentally, it's also supposed to cure bad hang-overs.
