I just found out from our Hispanic clerk that there is a little Mexican market with a little section at the front that makes tacos, right here in Cedar City, UT. So DDD and anyone else who regularly partakes, what's your advice for a taco novice? I'm shooting for a Cafe Rio type experience.

That line throws me off a bit. I like me some cafe rio, but a taco stand is definitely different.
If I remove that, I say ask what they are really good at. Personally, I like carnitas, al pastor, or carne asada, al pastor being my favorite. It should be served on 2 corn tortillas

ERCougar, typical taco stand set-up is as follows:
small corn tortilla
white onions
cilantro
meat of some sort (asada, al pastor, carnitas, lengua, etc)
Soft tortilla, none of this u-shaped hard mumbo jumbo.
You generally don't see a taco stand taco topped with cheese.
Standard toppings on the side are as follows:
jalapenos
mescla of peppers and carrots
radishes
slices of lime
chile sauce (green or red)
Drinks:
soda
Aguas (horchata, limon, pina, fresa, etc)
A good intro would simply be to get a few al pastor or a few asada. That is the basic, but also the most popular.
I have never been to a taco stand here in LA that serves any of the following: sour cream, cheddar cheese, "taco sauce" packets, ground beef, lettuce, diced tomatoes.Fitter. Happier. More Productive.
