  • Share Your Favorite Mexican Recipes

    I am responsible for cooking Sunday dinners at our house. I like to think I have decent range, mixing up Chinese, Cajun, Italian, BBQ, and other cuisines. However, I have never cooked Mexican food. This Sunday, due to a hankering for Chille Rellenos, I am going to try. If anyone has a good recipe for a Mexican dish, either Rellenos or something else, I would love to hear it. It does not have to be 100% inspired Mexican, Tex-Mex and similar varieties are also OK.

      I had forgotten about that recipe, but remember wanting to try it. It looks killer. How do you serve it? Just in a bowl like normal chili or do you use it to top something?

        The Pork:
        1 lb. pork tenderloin
        2-15 oz. cans tomato sauce
        1 1/2 c. brown sugar
        1 can of coke
        1 garlic clove, diced
        1/4 c. cilantro, minced
        Place all ingredients in Crock Pot on Medium for at least 4 hours.

        The Creamy Dressing:
        1 pkt. Hidden Valley Ranch Mix
        8 oz. Salsa Verde Green Salsa (La Victoria Brand)
        1/2 bunch of cilantro with the stems
        2 cloves garlic
        3/4 c. mayo
        3/4 c. sour cream
        1/8 tsp. hot sauce
        Mix in Blender. If needed, thin with Buttermilk

        The Rice
        8 c. water
        8 cubes/tsp. chicken bouillon
        2 tsp. cumin
        4 cloves garlic
        12 Tbsp. butter
        12 sprigs cilantro
        4 c. rice

        Serve w/ Tortillas, lettuce, tomatoes, etc... either as burritos or in a salad.

          I serve it in a bowl like regular chili. It's really a green chile stew.

            LOL! Brown sugar in mexican food! Who would eat that?
            At least the Big Ten went after a big-time addition in Nebraska; the Pac-10 wanted a game so badly, it added Utah

              I don't know if you're kidding or not. Chocolate is a popular ingredient in Mole.

                I'm kidding. This looks like a Cafe Rio style recipe.

                  Yes, but he already stated that he didn't mind inauthentic recipes.

                      Try substituting the salsa verde with tomatillos instead. And swap out the hot sauce for some jalapenos and that is the dressing we had tonight on our salad.

                        Here's a tomatillos version:

                        Creamy Tomatillo Dressing--aka the green dressing

                        1 cup Mayonnaise
                        1 cup Cilantro
                        1/4 tsp. Cayenne Pepper
                        1 pkg. Hidden Valley Ranch Buttermilk Recipe Dressing Mix
                        1/2 cup Buttermilk
                        2 cloves garlic, minced
                        3 tomatillos, quartered

                        Mix all ingredients in a blender until well blended. Chill before serving.



                        I like to just throw a pork roast in the crock pot with a package of bacon and cook it on low for 6 hours and just tear it up with some forks when it is done. It just falls apart. It is delicious and the easiest thing in the world.

                        Then make pork tacos with the pork, green sauce and some cillantro lime rice.
                        Cut up some lime slices and squeeze them on top as well.

                        Yum.
