A nice cool salad to serve in the heat of the summer. You can serve this with a side of thick tortilla chips, but it tastes good as is. Recipe modified from bushbeans.com.

1 red pepper, diced
1 green pepper, diced
1 yellow pepper, diced
1 small red or sweet onion, diced
1 15-oz can corn, drained
3 cloves garlic, minced
2 Tablespoons cilantro, minced
1/4 cup olive oil
1/4 cup red wine vinegar
1 tsp freshly squeezed lime juice
salt and pepper to taste
1 can black beans (Bush's or S&W, etc), well drained
Tortilla Chips
Mix the first 7 ingredients together gently.
Whisk the olive oil, vinegar, salt and pepper together, then drizzle over the salad.
Gently add the black beans.
