and I've got to provide one of the meals. I'm looking for something easy. Thanks in advance.

Fajitas. Use those fajita seasoning packets (just add oil and water) for your marinade. Cut up some chicken and marinate it in gallon bags. Slice enough onions and green/red peppers. Saute the vegetables for a few minutes in a dutch oven and then add the chicken.
Serve on a flour tortilla with a dollop of sour cream.Prepare to put mustard on those words, for you will soon be consuming them, along with this slice of humble pie that comes direct from the oven of shame set at gas mark “egg on your face”! -- Moss
There's three rules that I live by: never get less than twelve hours sleep; never play cards with a guy who's got the same first name as a city; and never go near a lady's got a tattoo of a dagger on her body. Now you stick to that, everything else is cream cheese. --Coach Finstock

great idea, do you think one dutch oven would cover it for 40 people?Originally posted by Donuthole View PostFajitas. Use those fajita seasoning packets (just add oil and water) for your marinade. Knock it off. This board has enough problems without a dose of middle-age lechery.

If you have a big one (10-13 quarts) you could probably cook for 40 in one oven (assuming there are some children and light eaters mixed in). If you're cooking for 40 hungry adults, you'd probably be safer with two smaller ones.Originally posted by pellegrino View Postgreat idea, do you think one dutch oven would cover it for 40 people?Prepare to put mustard on those words, for you will soon be consuming them, along with this slice of humble pie that comes direct from the oven of shame set at gas mark “egg on your face”! -- Moss

Wouldn't you want two smaller ones anyway else you have to saute the onions/peppers in batches?Originally posted by Donuthole View PostIf you have a big one (10-13 quarts) you could probably cook for 40 in one oven (assuming there are some children and light eaters mixed in). Not a bad way to go either.Originally posted by Fiyero View PostWhen you say you are in charge of one of the meals does that mean the main entree or the entire meal? Call your local grocery store deli, they probably do fried chicken full meals that come in servings of 8, 20, 40, etc.
The problem with the fajitas is I don't think many kids will eat it."Nobody listens to Turtle."-Turtlesigpic

You could sautee/soften all the veggies at once without too much problem, so long as you were constantly tending to them. It would probably just take a bit longer than if you had two smaller ovens. So your point is well taken.Originally posted by beelzebabette View PostWouldn't you want two smaller ones anyway else you have to saute the onions/peppers in batches?Prepare to put mustard on those words, for you will soon be consuming them, along with this slice of humble pie that comes direct from the oven of shame set at gas mark “egg on your face”! -- Moss

All the more reason, I say. But then, I'm pretty intolerant of pickiness (is that a word?) in general.Originally posted by Surfah View PostThe problem with the fajitas is I don't think many kids will eat it.Prepare to put mustard on those words, for you will soon be consuming them, along with this slice of humble pie that comes direct from the oven of shame set at gas mark “egg on your face”! -- Moss
