    Summer Holiday Menu Mega-Thread

    Tomorrow, Labor Day is upon us. What is on your menu? In my mind, Memorial Day/July 4th/Labor Day are similar from a gustatory perspective, so I thought the mega-thread would work well.

    Going with an old classic: smoked ribs, smoked baked beans, corn on the cob, fresh tomatoes.

      That sounds good. I love Drunk Tank's baked beans. I also like the veggies to balance out the meat.

            I did some awesome tri-tips midweek - incredibly melt-in-the-mouth tender - and jambalaya yesterday. I was planning on taking the jambalaya fixings on the road to visit a son & his family, but decided the timing wouldn't be right.

              jambalaya sounds good. maybe some spicy red beans, rice and sausage.

                    Just the standard cook to 140, then a reverse sear. I also trim off all the silverskin, but most people probably do the same. I cooked 3 tips, and two of them were very good as usual, but the third was at another level in tenderness. They were from a Costco multipack, and I've had similar results before, where one or two were a step above the rest. Just luck of the draw?
