  • Niku inspired me.

    So now I'm eating much much healthier. I'm down 45 pounds since April 1st. One of the keys has been homemade salsa. For lunch almost every day I have a big bowl of celery, carrot sticks, peapods and sliced cucumbers. I started out using hummas to dip them in, but didn't want the extra calories. So I switched to homemade salsa. I'm looking for new recipes so if anyone has a favorite, please share.

    Here is what I've been using in my food processor:

    10 tomatoes cut in half
    1 red bell pepper
    7 or 8 fresh jalapeno seeded and sliced in half long
    1 anaheim pepper seeded and sliced long
    10 - 12 soriano peppers seeded and sliced long
    3 or 4 yellow chilies
    1 large yellow onion
    5 green onions cut to the stalk
    3 tablespoons of minced garlic
    dash of cumin
    dash of cinnamon
    dash of chilli pepper
    1 teaspoon of kosher salt
    1 lemon
    2 limes
    small bunch of cilantro stems cut off

    Pre heat the oven to 450. On cookie sheet put the halfed tomatoes and peppers in for about 12 minutes.

    While roasting the tomatoes and peppers I cut the yellow onion into quarters and put in processor with garlic and spices. Chop.

    Remove tomato skins under cold water. Put all but 3 full tomatoes in the processor. Add all peppers. Blend. Squeeze lemon and limes into the mixture. Blend again for 5 seconds. Add green onions and dice. Add cilantro and dice. Add last tomatoes and blend quickly.

    The salsa is not as chuncky as some like, but holding out some tomatoes to the end helps. Very fresh tasting and very healthy. Really makes eating the other veggies much easier for me.

    Good sir, YOU THE MAN! Or, more accurately, approximately 80% of the man you once were. That's very nice work. That seems awfully fast, though, but if you're eating properly, I guess it doesn't matter.

      Thanks. I still have a very long way to go. It has been fun watching it fall off so quickly though.

        Dude, that's awesome. Once you've gained the momentum (and after 45 pounds I'm sure you have) it gets easier. It actually became like a game to me, weighing multiple times a day, figuring out when i weighed the least during any given week (Saturday afternoon), etc.
        Awesomeness now has a name. Let me introduce myself.

          Funny, because that's about where I am at. I find myself stripping naked to hop on the scale at all times of the day. I particularly like to weigh myself before and after I drop a deuce. Kind of neat to see how much my turd weighs.

                Did you ever figure out when you generally weighed the least during the day? I've always assumed we weigh the most in the evening and the least in the morning, but I've never tested it.

                    after my workouts. Most of that is water weight.

                      I weigh the least between one and two hours after I wake up.

                      I may be small, but I'm slow.
