  • Caribbean Food

    So DT and I are going to be cooking for a Stake Activity in mid September. Expected to have about 500 people in attendance.

    We need to come up with a main dish, two sides and two desserts.

    Anyone have any personal favorites? DT and I will be handling the main dish. Sides and desserts will be cooked by the members of my ward.

    What would you recommend? I need recipes to go along with it.

    Thanks for the help. And thanks to DT for allowing himself to be sucked into my calling.

    Jerk pork and chicken.

    If you want to be authentic, cook it in a 55 gallon drum on the side of a road.

      We are doing Jerk Chicken for sure.

      Sides will be peas and rice, and one other.

      Desserts...I am at a loss.

          What does carribean food have to do with it? Is it just something you came up with or is there an island theme to the activity?

          One of my favorite food types is carribean, especially West Indies. I think Trinidad and Tobago are king, as their style of curry is amazing. We use block curry when we do it at home, and that turns out fairly well, but it is still nowhere near what the natives make.

          We've made roti several times and it has turned out well. Not sure of the recipe, but I can probably find it if you are interested.

          I also love jerk chicken, but have never tried to make it myself. Plantain would be very authentic, but I personally don't like the stuff.

            The Carribean is the theme of the party the SP has decided on.

            I am just in a rush to find stuff, because I want to do some test runs to see what tastes good.

                    How large is the group you're cooking for? I would consider:

                    Jerk chicken or pork (or both! )
                    Brown stewed chicken
                    rice and peas
                    fried plantain
                    callaloo (closest thing in the US is swiss chard)

                    That's a reasonably authentic meal, and it would be delicious. A ginger beer or some kind of juice (guava or carrot) would go nicely with it. Dessert is hard, because that's a much more common American course. Maybe just do a fruit punch smoothie?

                      We are to plan for 500 folks.

                      Dessert may just be something simple.
