So we had breakfast for dinner, and there was a lot of bacon grease in the skillet. No sense letting it go to waste. I decided to float a few pancakes in it.
First, a dollop of pancake batter in the grease, basting the top until it puffs up like a doughnut:

Then flip to finish:

Remove and pat with a paper towel:

And top with powder suger:

The crunchy rim around the top is especially tasty. A little rich, but pretty good overall.
