Easter Sunday Dinner (Don't look, Cowboy)

  • Easter Sunday Dinner (Don't look, Cowboy)

    We haven't had a family dinner featuring ham in years, but I can hardly think of an occasion so appropriate for a non-beef centerpiece, be it ham, lamb, or even rarebit. Even when using the same old ingredients, I try to freshen up the recipe to cook in a manner different from the dishes served up in the fall for Thanksgiving. For example:

    Spring... Fall
    potatoes au gratin instead of mashed potatoes.
    wilted spinach salad instead of creamed spinach.
    marinated and grilled asparagus spears instead of steamed asparagus
    gazpacho instead of creamed leek and potato soup
    sauteed green beans with peppers instead of green bean casserole

    We'll probably do the spiral cut ham from Costco as a plain main course, and augment with lots of side dishes. I can't stomach easter eggs, those disgusting boiled eggs that are colored with egg dye from where the egg cracked and the dye seeped through, but I will make a tray of deviled eggs. Also, you gotta have frogeye salad. If frogeye salad wasn't made for Easter Sunday dinner, I dont know what is.

    Post your Easter Dinner fare. Is it a special dinner? Or is everyone in a candy coma and peeped out? Any nice easter traditions?

    Can frogeye salad be considered a guilty food pleasure? I mean, does it get any more easy Mormon mix some odd canned/premade ingredients into a bowl, but dang, that stuff is good. Mmm....
    At least the Big Ten went after a big-time addition in Nebraska; the Pac-10 wanted a game so badly, it added Utah

      We usually go to brunch somewhere. I guess this year we're having dinner with some friends. I'd rather go to brunch.
      So Russell...what do you love about music? To begin with, everything.

        Easter is another holiday that I can't figure out once kids grow up.

        TK2 wants an Easter basket, but she is going to LA for the weekend with a friend to watch a Softball game, and on Sunday will be at the Angels game.

        Wife and I may just eat leftovers.

        I suck.

          At Easter about 12 years ago, my FIL put canned pineapple slices on the outside of the ham while it cooked. When it came out, he and I ate ALL of them (no one else would even try them) as soon as they were cool enough to chew. Delicious. I've tried it with fresh, but it's not the same flavor.

          I think we're going to make a sirloin tip roast with Dale's seasoning, mashed potatoes, green beans, deviled eggs, and some kind of dessert.

          wuap's Deviled Egg Recipe


          (this is my grandpa's recipe. He was a Baptist Deacon and refused to call them 'deviled.' He always called them "Aggravated Eggs")

          18 eggs
          1 tbsp table salt
          1/8 cup of white vinegar
          2 tsp apple cider vinegar
          2 heaping spoons (maybe 1/4 cup) of Kraft, McCormick, or Hellman's (Best Foods) Mayonnaise (no other brand will do).
          1 tsp kosher salt
          1 large Ziploc bag
          Paprika or Ground Guajillo chile

          Place eggs in large pot with wide bottom. Cover + 1 inch with warm water add 1 tbsp table salt and al of the white vinegar. Bring to a boil. When water boils, remove from heat. Let stand 2 minutes in hot water. Drain and let eggs cool about 30-45 minutes. Peel eggs. Remove yolks cutting eggs in half, placing the egg halves on a tray or cookie sheet, and putting the yolks in a Ziploc bag. Once finished, close bag and smash yolks to fine crumbs. Then, add mayo, apple cider vinegar, and kosher salt, close bag and knead until creamy smooth. Open bag and check taste. Add more mayo (in small small amounts), vinegar (drops at a time), or salt (tread lightly) until you like the taste. Be careful though, the salt flavor will strengthen as the eggs chill. Once satisfied with the flavor, seal the bag, removing as much air as possible. Take some scissors and cut the corner off one side of the bottom of the bag. Using it like a baker's piping bag, squeeze the mixture into the egg halves. Top completed halves with either paprika or ground Guajillo chile (if you want a little kick--Guajillo isn't too hot). Place in an airtight container and put in the fridge overnight. They taste best when they are really cold.

            Agreed (not that you suck, but not going all out with Easter). Our kids have never gotten big easter baskets/gifts, so they really don't look forward to it, though.

            The thing I'm most excited about is singing a killer medley with the ward choir. We nailed it at our last practice, and I'm hoping to kick my cold enough to be a contributor Sunday.

              Hey Wuap, how did you affix the pineapple slices to the ham? Toothpicks?

              I bet that would taste pretty good. When my family eats out at a churascurria, we all fight over the grilled pineapple when the gauchos bring them to the table.

              I'm thinking that you could use fresh pineapple if you marinate it in a rum sauce first. From the internet:

              1/2 cup honey
              1/2 cup rum
              1 Tbl lemon juice
              Marinate and grill.

                We are having Easter today since I have to leave on business tomorrow and won't be back for a week. Not sure what we're having for dinner.

                  We usually do prime rib on Easter Sunday but I'm divorced dad with the kids this weekend so not going to make an entire prime rib for just me. Easter is going to be a bit of a downer this year.

                          Our Easter Bunny always comes on Saturday. We call it bunny day. We'll be eating a traditional ham dinner on Sunday.

                            Here's our menu:

                            Bitter (an aperitif that has ginger as its base)
                            Olive/grape/cheese platter as appetizers
                            Homemade three cheese ravioli in a bell pepper sauce
                            Leg of lamb with red potatoes and asparagus
                            Green Salad
                            Macedonia fruit salad
                            Torta di Colomba (an Italian Easter cake similar to a panettone)

                            This is our normal Easter meal. We'll wash it all down with numerous non-alcoholic drinks/punches prepared in situ.

                              I feel your pain. Sorry you won't get to enjoy your traditional prime rib. I'm pretty good at listening if you need to vent.
