  • Speaking of funeral potatoes

Several years ago I was on the activities committee and wanted to have a funeral potatoes cookoff as an activity. Like a chili cookoff but poking fun at Mormon culture at the same time. I thought it was hilarious and so did the Bishop. But he still nixed the idea, concerned that somebody would get offended.

Learn to laugh at yourselves people!

    That's not a bad idea.

Oh man I love the things. Potatoey goodness topped with corn flakes.

One time my mom accidentally got the Bananna Corn Flakes. Those were on the interesting side and would not have won the cookoff.

I have one of those Relief Society cookbooks made in the late 70's or early 80's by some random ward. In that book, I kept searching for Funeral Potatoes and found them under the recipe entitled Great Au Gratin Potato Casserole. I never knew the real name of that dish prior to finding it in the cookbook.

That's all right. When I was a little kid, I thought my dad was saying hog rotten. Thank goodness I learned to read.

Also, the problem I see with the cookoff idea is the winner/loser gets called on to provide more compassionate service. Does your competitive side win out, or do you throw the contest with banana Corn Flakes?

I'd be all over that as an activity. I've had some wonderful funeral potatoes as well as some truely awful ones.

Perhaps we should have a post-ride 1st annual CUF Funeral Potatoes cookoff in combination with the ride around Tahoe.

I love funeral potatoes. I made some on Easter. I like to use Panko for the crust. I also use whatever cheese I have in my fridge alongside the cheddar. Sunday I used Sharp Cheddar, Asiago, and Parm.

Great idea. Some may have to skip the ride in order to be mentally prepared to eat.

Funeral potatoes are a side dish. We need spam casserole to go with it and churros for the finale.

                          Three cheese funeral potatoes?

                          You are a culinary genius.
