    I hate meat loaf. Mpfunk can confirm. I've yet to have an iteration of meat loaf that I could stomach. Something about that much goopy ground beef...

      Try it cold in a bagette with course ground mustard. It firms up cold.

        Growing up we had it weekly. There were many variations, and I liked them all. I had a nice slice of a ground turkey loaf last week. I think it was even healthy.

        If you are in L.A. you should have the meat loaf at Kate Mantilini's. It's not like anything you'd get at home - they've made it trendy - but it has been on the menu there for years now and is very good.

          Thanks. I will. I used to get to LA a lot more than I do these days. I miss it. My favorite restaurant there is Mr. Chau's.

            I don't have much to add other than good meatloaf must include strips of bacon across the top.

            If you're ever in Denver there's a place a bit west of downtown in the Highlands neighborhood named Bang! that has a meatloaf (as well as a bread pudding) that is worth checking out.

              Paula Deen's Bacon Cheeseburger Meatloaf

              * 1 lb ground chuck
              * 10 slices bacon, cooked and crumbled
              * 1 (8 ounce) package sharp cheddar cheese, grated
              * 2 large eggs
              * 1/4 cup fine breadcrumb
              * 1/4 cup mayonnaise
              * 1 tablespoon Worcestershire sauce
              * 1/4 teaspoon salt
              * 1/4 teaspoon pepper
              * 1/3 cup ketchup
              * 2 tablespoons prepared mustard
              * 1 (3 ounce) can French-fried onions (optional)

              Directions

              1. Preheat oven to 350°F.
              2. Spray a baking dish with non-stick cooking spray.
              3. In a large mixing bowl, combine the first 9 ingredients, mixing well by hand.
              4. In a small bowl, combine ketchup and mustard.
              5. Stir in 1/4 cup ketchup mixture into the meat mixture.
              6. Place meat mixture in baking dish and shape into a loaf.
              7. Spread remaining ketchup mixture over meatloaf.
              8. Bake for 40 minutes.
              9. Remove from oven and top with French fried onions.
              10. Return to oven and bake 10-15 minutes longer, or until meat is no longer pink.

                    this is the main problem with meatloaf. the very nature of it requires it to be cooked in a small vat-shaped pan. there is nowhere for the grease to drain, so as a result, meatloaf always feels drenched in fatty grossness.
                    Fitter. Happier. More Productive.

                        Well, I was referring to the inevitable huge bowl of raw ground beef. To be honest, I don't eat much ground beef if I can avoid it. Mpfunk did make a blue cheese one that was probably the best I've had, but he ate all the leftovers for days and I couldn't stomach anymore.

                          Here's the recipe that I use, it beat out Bobby Flay's version, so you know it has to be good . Like the Collucci Brothers, I shape the loaf and put it on a baking sheet instead of letting it soak in it's own grease in a baking dish.

                            But I'll indulge you for a moment. You can try three readily available variations on meatloaf. First, see if Whole Foods cafe sells one. Second, see if Whole Foods sells a frozen one you can reheat. If those two options still leave you wanting, have your chef prepare you her version. Let us know how that turns out!

                                This thread sucks. Meat loaf sucks. The only thing close to meat loaf that I enjoy are stuffed peppers.
