Like the football team, I plan to take the offseason very seriously. With Florida State coming to town, I'll need to be on my A-game for the tailgate. I'll be trying out this recipe:

1 (4 pound) boneless pork top loin roast
1 t olive oil
Rub
2 t. granulated sugar
2 t paprika
1 1/2 t onion salt
1 1/2 t garlic salt
1 t ground black pepper
1/2 t chili powder
1/2 t ground cumin
1/2 t ground coriander
Place boneless pork loin on large cutting board or platter - trim off all fat and silver skin; brush oil over all sides. Set aside. Stir together dry rub seasoning. Rub over pork to cover. Pre heat grill for 4-5 minutes. Place pork loin on grill over direct heat at medium-hot temp. Once the pork loin is seared on all sides (about 5-7 minutes on each side), move to one side of grill; turn off the gas directly under the pork. Leave the rest of the grill on medium heat. Close lid and cook covered for 70-90 minutes or until internal temperature reaches 160 degrees F. The time is really just an estimate - check meat with your meat thermometer to make sure it is cooked how you like it.
