    Sorry KCC, I just saw this. I didn't really change that much. I used the fat from the bacon to start my roux as well as the butter. We get raw milk from a local dairy so I used the cream at the top with a touch of the milk to thin it out a bit, in place of the commercial whole cream. I add about 50% more fresh garlic. I also used generous amounts of smoked gouda and topped the mac with sharp cheddar.

      Looking to do some smoked mac n cheese. Researching recipes. These two look tempting:

          Make normal macaroni and cheese and then mix in a teaspoon of liquid smoke. Delicious.

            Or cold smoke the cheese and then use it to make normal macaroni and cheese.

                      Flavor was good but way too dry. Next time I will increase the milk/half-n-half and/or reduce the cook time at the end.
