My MIL makes this awesome cranberry relish that makes leftover turkey taste awesome. We had the turkey enchiladas last night. I am turkeyed out for a long while. We use to have a turkey for Christmas as well. Thankfully, my dad changed that tradition to prime rib about 5 years ago.I'm your huckleberry.

It will come as no surprise to any of you that we always have prime rib for Christmas and Easter. This year, I'm thinking about smoking the rib. A friend of mine runs a little mobile bbq joint around to county fairs, etc. and also does some catering. He catered a prime rib for us when we had a group of people here from New York, and it was awesome.sigpic

Has anyone here smoked a rib roast before? I am intrigued by it, but it is a lot of money to spend on a hunk of meat if it doesn't turn out. What temperature do you take the roast to? The same as if you are roasting it in an oven? (I usually go to about 135) Anything else you would do differently for a rib roast than you would for a pork butt?

Costco is selling a Wagyu (Kobe beef) prime rib roast for $299. My friend says smoke it for two hours and then wrap it and cook it like anything else, but take it off the heat according to your temp. probe. We usually pull our rib out of the oven at 110-120 because it will keep cooking until you cut it. That makes most of it rare/medium rare with the end cuts medium. If it's too rare when you cut into it, you can always stack the cuts before you serve them or even dip them in boiling au jus to cook them just a little more.Originally posted by Clark Addison View PostHas anyone here smoked a rib roast before? I'd like some instructions for prime rib (non-smoked). A few years ago I cooked beef wellington on Christmas Eve and then repeated it last year. My 13-year old is now convinced we've got a tradition on our hands. That would be fine with me, but I've never cooked prime rib before.
