I am sure this is just an average weekend for DT and Tick, but dealing with this level of volume is a new experience for us. Some pics:

    a) 5x batch of beans going in the smoker last night. Barely fit in three steamer pans

    b) 14 butts ready to go on the smoker at 2 am. Should have put them on at 4 am. Ended up with plenty of time.

    c) After foiling this morning. Also had 2 butts in my Traeger.

I can't imagine doing this without the foil pans. Makes things so much simpler and cleaner.

Costco will as well. A cryo runs anywhere from $110 to $130. There are usually 6-7 good sized tri tips in each cryo. I split them up and vacuum pack them myself.

Also we do the same thing with chicken and Tri-Tip. A cryo of tri-tip you can get for $5.99/lb instead of the $7.99/lb they sell them for individually.
How much is in a cryo of tri-tip? Will Costco do something similar, or just Sam's?

We needed 14 so they threw in two more packages at the same price. 100 lbs for $109. That right there paid for my annual Sam's Club membership. For two years.

Also doing a 5X batch of DT's smoked beans. You can buy Bush beans by the gallon at Sams.

I think the final cost is going to be ~$2 per person for pulled pork sandwiches, sauce, pickles, onions, smoked beans, and tossed salad. That's crazy.

I go through so much rub that I buy spices in bulk and make my own using the recipe shown here:

    http://www.cougarstadium.com/showthr...light=official

I also like the flavor of the rub as much or more than any commercial rub. But there are lots of great rubs out there, including Butt Rub.
