    I'm a big fan of tacos; I'd even shave my head for one. But the cheese, the grease, the red meat.... no good. So last night I did this instead:

    -Diced chicken breast, white meat only
    -Simmered in an adobo blend with no salt or MSG, and a touch of red curry paste to taste
    -Mix with steamed brown rice that was seasoned with a diced onion and lime juice only (no butter or salty salsa)
    -Served in a wheat pita, topped with diced tomato. No cheese.

    They were awesome.

    Awesome, those sound really good. I love brown rice, but getting it into this Asian house I belong to know is nearly impossible. But I have a good recipe for some I think I am going to make tomorrow. Wish me luck getting back in the door.
