I'm a big fan of tacos; I'd even shave my head for one. But the cheese, the grease, the red meat.... no good. So last night I did this instead:
-Diced chicken breast, white meat only
-Simmered in an adobo blend with no salt or MSG, and a touch of red curry paste to taste
-Mix with steamed brown rice that was seasoned with a diced onion and lime juice only (no butter or salty salsa)
-Served in a wheat pita, topped with diced tomato. No cheese.
They were awesome.
