                Oh, yeah, I probably would have made the same decision. It was the way my wife exclaimed that Smith's didn't have it that I'm eyerolling over. Only after some prodding (after she'd left the store) did she tell me about the crystallized ginger.

                  I have an entire bag of candied ginger from TJs. I bought it for this same brine last year, used 3-4 pieces, and still have the rest. It is not crystallized, though. It has the texture of a sour-patch kid. Probably not the same thing, but it worked great for the brine. Definitely very pungent.
