this is just patently false. If you are talking about Chicken of the Sea, then yes, you might as well eat cat food, but excellent canned tuna not only exists but can be plentiful, depending on what your local grocery scene is like. Ortiz tuna comes to mind, Trader Joes offers an good yellowfin, albacore, and light chunk tuna at an excellent value. Then we have the Italian brands like As do Mar, Tre Torri, and Rizzoli, which can cost anywhere from $10 to $50 a jar here in the states. In short, canned tuna, when done right, isn't just good, it's a highly desired delicacy. Try some, I know you'll like it.Dio perdona tante cose per un’opera di misericordia

So we broke out the grill this week, and tried our hand at grilling fish. Thanks for all the helpful replies.
We went to a local fish market and got some nice fresh halibut steaks. We marinated for about three hours in a mixture of olive oil, lemon, rosemary, salt, and pepper. We cooked on foil over a medium low grill for ten minutes, turning once at minute five.
The fish rested for only a few minutes, waiting for its accompanying carrots, broccoli, and seasoned rice. It was delicious, and was a hit with everyone. All of my kids enjoyed it, which is remarkable considering how finicky they can be.
Sorry for no pics, but I don't really know how to get them from Picasa to CUF."Sure, I fought. I had to fight all my life just to survive. They were all against me. Tried every dirty trick to cut me down, but I beat the bastards and left them in the ditch."

If you ever to want to try your hand at cooking it inside, this is the best recipe I've EVER found for salmon. I could eat it almost every day! http://www.foodnetwork.com/recipes/a...ipe/index.htmlOriginally posted by San Juan Sun View PostSo we broke out the grill this week, and tried our hand at grilling fish. Tonight it was tuna steaks on a foiled grill. I was a little nervous because it seemed to take a bit longer to cook than the halibut did. But it all turned out really good. We lightly coated the tuna in olive oil, grilled, rested a few minutes, and the seasoned with salt, pepper, and fresh lemon juice. The fresh lemon juice was delicious, and the kids really liked squeezing the lemon on their fish. As it turns out, all of my kids and my wife really enjoyed dinner. Thanks CUF!"Sure, I fought. You think so? I much prefer the flavor of salmon.Originally posted by Portland Ute View PostTo echo...
Don't start with Salmon, even if it's fresh.
If you MUST start with "salmon", get fresh steelhead. It's much milder than other salmonid species.
I, too, would start with a fresh Halibut.
Instead of cooking inside, try cooking it on the grill outside. Get a fish rack to grill it or even use a cast iron pan on the grill. Or even foil.
An easy and quick way to make Halibut is to make a little "pan" out of foil by rolling the edges. Add some butter, lemon juice, garlic, pepper. I prefer to salt it after it's plated. Cook it on low on the grill. When you are done, just toss the foil in the outside garbage when it's cool and you are done with clean up. No smelly house. No dishes but the table ware."There is no creature more arrogant than a self-righteous libertarian on the web, am I right? Those folks are just intolerable."

I dated a woman who made me the best halibut I have ever eaten...her ex was a chef. She layered fennel, shallots, tomato and few other herbs I don't remember on some parchment paper. She put the halibut on top of that with a little dijon, lemon juice and basil. Baked it in the oven and it was fantastic."The mind is not a boomerang. To bring this thread full circle, my wife surprised me with this tonight.

Tuna steaks and strawberry salad. Delicious."Sure, I fought. I had to fight all my life just to survive. They were all against me. Tried every dirty trick to cut me down, but I beat the bastards and left them in the ditch."

Need to see a cross section before this can be declared a win; looks far too well done for tuna. #sjbhYou're actually pretty funny when you aren't being a complete a-hole....so basically like 5% of the time. --Art Vandelay
