  • Big Lots has Acini di pepe pasta

    $1.50 for a box, 17.5 oz. Imported from Italy. The stuff is hard to find. In SL County, you can only get it from Harmons, seasonally. You use it in frog eye salad.

    I have a terrific recipe-- it's not your mothers frog eye. No more bananas and miniature marshmellows and fruit cocktail. Instead, it uses pomegranates and grapefruit and pineapple. Still has mandarine oranges, tho. BM me.

      Frog Eye Salad

      1 cup Sugar
      2 Tbl Flour
      3 Eggs, well beaten

      1-1/2 cups Acini de pepe Pasta
      1 can Pineapple tidbits, with juice
      2 large cans Mandarin oranges
      2 large cans Pineapple chunks
      1 container Cool Whip

      (you need a fine mesh colander)


      1. Drain both cans of pineapple, reserving liquid. Measure 1-3/4 cup of the juice. If there is not enough liquid, open one of the mandarin orange cans & use enough orange liquid to get to 1-3/4 cup.
      2. Remove the pineapple from the open can and refrigerate in plastic container. Refrigerate all unopened cans as well.
      3. Heat pineapple juice, sugar, flour, and eggs, stirring constantly until thickened. Boil shortly.
      4. At the same time, cook the pasta in a separate pan, rinse in cold water until cold. Add to thickened custard mixture and chill at least overnight.
      5. Right before serving, add crushed pineapple with liquid, drained oranges, pineapple tidbits, and cool whip. Add additional items, see below

      6. Old fashioned Frog Eye: Add grapes, mini marshmellows. If you're going to eat it within 3 hours, you can also add sliced bananas and chopped nuts.
      7. Other items: sliced canned grapefruit, fresh tangerine cuties, or Dole citrus salad. Fill bowl with water, peel pomegranate under water, sieve and add pomegranate.

      why you have to refrigerate overnight: It takes time for the acini di pepe to absorb water and plump to the texture of tapioca pearls.

        I have mental block. No way I can eat stuff from Big Lots or the dollar store. I don't trust the food there.

            You go ahead and boil your arse&peepee pasta from the dollar store. I will just go to the regular grocery store and buy it for a buck more.

              Oh, it's pasta...from a dollar store. I couldn't figure out what the hell she was talking about. The only word I recognized in her subject line was "has."

                      To be honest, I was kind of offended that KL insulted my mom's frog eye salad, esp without having tried it.
