  • Fave chips and dips

    I searched for a thread with dip recipes but you can't use "dip" as a keyword in the search...it is too short.

    Anyhow, looking for some of your fave dip recipes, as well as preferred chip or dipping mechanism.

    I enjoy most dips, with the exception of clam dip. I have never enjoyed rubbery canned clams.

    Does anyone have a favorite cheese/sausage dip recipe? How about a good bean dip recipe?

    Suggestions wanted.

      Really? Maybe I just haven't tried a good recipe. Share a good one and I will try. I just seem to have bad luck with that.

      I also love 7 layer dip but I leave out the olives, so I guess it is 6 layer dip. However, it makes a huge difference when you make your own refried beans. Tastes way better than canned beans.

          5 avocados, diced
          3 scallions, chopped
          2 limes, juiced
          1/2 cup chopped tomatoes
          1 tbsp chopped fresh cilantro
          1 15 ounce can black beans, drained and rinsed
          salt and pepper to taste
          chipotle sauce to taste (optional)

          Place avocados, scallions and lime juice into a large bowl. Mash avocados to a coarse puree. Stir in tomatoes, cilantro and beans. Season with salt and pepper.

          Very simple and delish. I like to eat this dip with tostitos chips.

                Most any dips with Fritos Scoops. I love fresh made guacamole. Yummy.

                        1 block of velveeta
                        1 1/2 pounds of the best pork sausage you can get (hot or mild)
                        2 small cans of Rotel
                        1 red bell pepper
                        40 mg Nexium
                        300 mg Ranitidine

                        1. When you wake up in the morning, take the 40 mg of Nexium. 2. About four hours before you want to enjoy this, place the Velveeta in a crock pot on low heat so that it will melt by the time you want to serve it (if the Velveeta hasn't been refrigerated, then only 2 hours ahead of time is needed). 3. About 30 mins before serving time, cook the pork sausage on the stove until the sausage is completely cooked and is broken up into the tiniest pieces possible without using a food processor. 3.5. Take the 300 mg of Ranitidine with plenty of water. 4. Open both cans of Rotel and stir the contents into the Velveeta. Recycle the empty cans in your neighbors' recycling bin. 5. Dice the red bell pepper into 1/4" pieces and stir those into the Velveeta. 6. Drain the pork sausage in a collander. 7. Stir the pork sausage into the mixture and allow it to sit for about 10 mins before serving. 8. Serve with your favorite sturdy chips. I like Fritos or Scoops. 9. Keep some Tums or Maalox around in case the Nexium and Zantac prove ineffective.

                          My take on this is a little different:

                          1 lb velveeta
                          1 lb sharp chedder ( grated )
                          1 16 oz can chili w/o beans - or for those so inclined - leftover homemade chili
                          1/2 c favorite bottled salsa

                          combine all ingredients in a crock pot until cheese is melted (2-3 hrs) and serve with favorite chips

                              I make an artichoke dip that everyone likes. It is thick, so I wouldn't use it with fragile chips, but it is good with pita chips, bread, or spoons.

                              It is not healthy. I don't use a recipe, but it goes something like this:

                              - Roast 2 heads of garlic in the oven (cut the tops off, drizzle with oil, wrap in foil, and put in a 325 oven until brown and soft, an hour or so).
                              - cut up 1 onion, throw it in a smallish frying pan with some salt and cook over the stove over med-low heat until thoroughly softened
                              - Add about 1/4 cup of whatever wine you have in the pantry to the onions and let it reduce for 5 minutes or so.
                              - Add 1/4 to 1/2 cup of cream to the onions, depending on how unhealthy you want it.
                              - Add the roasted garlic to the pan. Simmer over low heat for a few minutes.
                              - You will need 2 cans of artichoke hearts, drained
                              - Put 1 of the cans of artichoke hearts in a food processor or blender along with the onion/garlic/wine/cream mixture. Process/blend until pretty smooth.
                              - Put two blocks of Cream Cheese (Neufchatel works well and is lower in fat) in a largish bowl, and heat in the microwave 60 seconds or so until warm and soft.
                              - add the mixture from the processor to the cream cheese and mix (I use an electric hand mixer) until well mixed.
                              - Cut the other can of artichoke hearts into small pieces (I use the slicer on my food processor), and add to the bowl
                              - Add a small amount of good parmesan or similar cheese (optional), and mix.
                              - I usually put everything into a small baking dish (we have a nice one from Mexico), and top with some more Parmesan cheese and maybe some panko bread crumbs. Stick it under the broiler (not too close!) until just browned on the top.

                              I have put Spinach in it as well, but I prefer it without the spinach.
