I enjoy American cheese on a cheeseburger. However my wife refuses to eat it under any circumstance. I do not enjoy American cheese on things other than cheeseburgers but I don't intentionally avoid it.

Where is Niku in this thread? I consider him the Editor in Cheese of CUF.

Has anyone here ever had government cheese? As a young lad in Vernal, Utah we would get it sometimes. It had a very distinct taste, that I can recollect to this day.

The thought just dawned on me: why were we getting government cheese?

Just to echo the sentiment that best reflects the truth:

On a hamburger, fantastic. On grilled cheese, horrible.

Like HFN, I like on cheeseburgers and also in Grilled Cheese Sandwiches (might be me remembering childhood - but that is another story ) Other than that - not so much

I use Velveeta in my Mac and Cheese and in Chili Cheese dip, but that is all.

I may be small, but I'm slow.

Yes, I have and it was gross. My mom befriended an elderly woman on welfare. My mom was always inviting her over for dinner, cleaning her house, etc. She would get enormous bricks of government cheese that she could never eat and so she'd share it with us.
What's to explain? It's a bunch of people, most of whom you've never met, who are just as likely to be homicidal maniacs as they are to be normal everyday people, with whom you share the minutiae of your everyday life. It's totally normal, and everyone would understand.

I hear it's pretty tasty when you eat it in a van down by the river.

I'm here. I do not like American cheese, if you are talking about kraft singles sort of things. Also not exactly a fan of Colby. Colby jack is tolerable, but only because jack is tasty and a wonderful delivery system for peppers.

I stand by one of Brie or gorgonzola as my favorite, depending on my mood. A good cambezola is a reasonable compromise.

On topic, an easy entertaining appetizer can be made from Costco cheeses. Go to Costco and pick out a cheese or two. Which ones aren't vital, but you can take a smartphone to look them up as you shop. I recommend a variety - something hard and nutty, something soft, something with tang, something not made from cow's milk. Get some water crackers, a small sharp knife and a wooden cutting board. And some grapes and and balsamic vinegar (go aged and small bottle). Maybe some hard salami type cured meats too (also available at Costco). Assemble on the cutting board. Leave out while you prep your thanksgiving or Christmas dinner for people to snack on. Big hit and relatively easy. We do this frequently, actually, when we entertain.

There are places with more variety and better cheeses than Costco, obviously, but they will do unless you're hosting heads of state or DDD. If you are a drinker you can go in for wine pairings too. Many grocery stores, actually, are stocking better varieties and selections of cheeses. Nothing artisanal mind you but good enough.

For extra variety you can choose your cheeses on a theme. Cheeses of Spain, etc.

People who eat velveeta deserve what they get.

A shame you don't drink wine. Cheese, fruit, dark chocolate and wine is divine.

A number of coworkers have noted the same. I would be a total oenophile.

Dark chocolate is an excellent pairing if it's high quality, I agree. There are any number of ways you can go with cheese and sweets if you are careful.

This is basically my go-to contribution for Thanksgiving. There's a triple cream French cheese that I always get that's always a hit. Can't remember the name of it for the life of me, but I recognize it by sight. Throw it together with some cured meats from Salumi, baguette from Bakery Nouveau, and it's pretty much ready to go.
