  • Short little article about Salt Lick brisket. I thought the little tidbits about no mesquite nor tomato based BBQ was interesting.

              I just checked it. It say best used by 3-31-12. I don't like it so I'm going to just toss it. It is yours if you want it.

              • What could have been. The flavor is great but it is Just too dry, I think. I had to FTC the flat for 4.5 hours waiting for company. My guess is that is a little on the long side.

                Oh well. Pics later...

                  I have FTC'd longer than that. I don't think that would dry it out. I would guess either overcooking, too much fat trimmed, or just not a great piece of meat.

                    I've gone 5 hours but I usually don't want to go over 4. But you're right that the time of the FTC wouldn't likely dry it out.

                    • Well, turns out it wasn't that as dry as I thought. After the first 2-3 slices it tendered up and I was quite pleased With the results.

                                I think the purpose of the bend test is to demonstrate/test how tender the brisket is. Yours looks nice and limber. A tough, dry brisket wouldn't exhibit as much bend.
