I have two briskets in the oven and four racks finishing up on the Traeger. Huge batch of beans in the oven. Crowd arrives in one hour.
My night was so hectic that I didn't have time for pics.

    11 adults, 10 kids.
2 briskets, 4 racks of ribs
One full batch of DT's beans
    Corn on the cob, watermelon.

Had about 8 ribs left over and about 2/3 of a brisket. I was surprised as I thought I might run out of meat. Only finished off about 1/2 of the beans. But everyone was stuffed. Kids didn't eat much. Probably would have been just right for 21 adults.

Ribs were a little overdone (by my standards) but I doubt anybody noticed. Brisket was perfect! Everyone raved about both. Best bbq ever, yada yada yada...

    • Had a great meal at the FMCoug house. The brisket was phenomenal and the pig shots were awesome as well. It has been fun to take advantage of their hospitality the last few days. Great family, great time.

      • For those of you in the UC: I went to the Orem Costco yesterday and they only had a pile of flats. No packers. I knocked on the window and asked what was going on and they said that they are dependent on what the supplier ships in and for the past week it was nothing but flats. He had no idea if or when they would have packers again. I had my wife call the Lehi Costco and they are in the same boat. Grrr...

So I picked out a few 5 lb flats and I am giving it a shot. Will report later.

I had the same experience on Thursday. Nothing but small fry. I was there for tri-tip, anyway, but thought I'd see if they had any decent briskets, too.

We had a ward deep-pit barbecue the other day, cooking big beef roasts for 20+ hours over cherry wood coals and sealed in a pit. Normally it's very good, but this year seemed a little below par. It didn't help that we've had some good results with the Traeger. My wife and I looked at each other and both said, "I like our own from the smoker better."

They made a big deal over a guy who cooked a 'turkey' in his Traeger, but it turned out that it was one of those processed turkey loaves. Blah, who thought that was a good idea?

Not happy with the results. Not terrible, but nowhere near as good as the packers.

I've said it before but IMO smoking those little flats is a waste of time and money.

Some of us need to learn by experience.

                • Took my first shot at brisket yesterday. I failed. I have a lot to improve on.

I have yet to try a brisket. I know I have to do it but I can't bring myself to try. Tip is less expensive, juicier, and takes an hour.

Brisket is a different beast all together. I like them both for different reason.

Brisket is now officially my favorite thing to do in the Traeger. Just bought two packers today during my lunch break: one for another family that is having a funeral and one for us. Yes, they are back in stock in Orem. :rockon2:

Brisket is fantastic leftover. Brisket enchiladas are wonderful.
