This post has 2 purposes.

1. I will be sending out paypal information tomorrow for the pellets in the qty stated above.

2. I put this giant ass bad boy on the smoker just now. Picked up a whole packer at Costco, just like Lebowski said they are mixed in with the flats.







this is a big piece of meat, biggest I have cooked. Cost me $41. I believe it was 13+lbs. @ 1:30 per pound I thought it best to put it on now.

Costco is funny with full packers. I've had them tell me several times they've never sold them in the Bountiful location. I've bought two in that location.

Question on therm placement. I always go in straight from the side. I see a few of you go top in. Is top in more accurate? I always figured I would get a more accurate temp getting more of the probe in the meat.

Good question. I have no idea why I go in from the top, I just try and find a good thick spot and angle in hoping the probe doesn't end up in a fat vein. Going in frim the side, as you do, makes much more sense.

JL is right, that is a fine looking hunk of beef. What temp are you cooking at? Wood flavor? I think the biggest full I've done is 14 pounds pre trim. It took about 20 hours in all with FTC. It was amazing though.

I just realized since falling in love with tri-tip I haven't cheated on her and done a brisket. It has been about a year now. I think the last one I did was for the CB cook off last summer. I leave town tomorrow for 12 days. Might have to break down and do a brisket when I get back. It looks very good, Coach.
