I usually take two potatoes, peel and cube them into small chunks. I've found quarter inch chunks usually cook faster and better. Once they're cubed, I place them in a pan with a little bit of olive oil to brown the potatoes. I let them cook for 5-7 minutes or so, or until they start to brown. I also add garlic salt and pepper.
Once they've browned, or are pretty close, I add between 3 and 6 eggs (depending on how many people are eating). This morning I did two eggs and some egg whites, which actually worked out quite well. Once the eggs have been folded in, I add some type of meat. This morning it was Bacon, Turkey Sausage with some chopped Spinach.
At that point, I mix in some shredded cheese, heat up some tortillas and add some hot sauce. Delicious and pretty easy, though it takes about 15-20 minutes to make, which is more than I usually spend on breakfast. It feeds between 4 and 6 people depending on how many eggs you use, and how large of a burrito you want to eat.
