        Edit: Taking DH's advice, less meat will be needed when there are a ton of sides. I'll plan 1/3 pound cooked turkey per person. For 100 people, that is the equivalent of 18 of those 3# boneless breasts.
        I planned for 1/3 pound, but really figured 1/4 pound was more likely. If I had cooked 12 turkey breasts instead of 18, I would have hit it spot on. Still, better to have too much than not enough.

        The holding went great. I ended up having to cook the second batch at a higher temperature to get them to cook faster so they'd all be done on time. The first batch was a little better than the second batch accordingly, but I was the only person who really noticed. Plus, only three of those breasts were actually served up.

        Appreciate the feedback and help!

          • OK folks. Let's hear your plans. We only have three of us this year (), so I am going to try to sous vide a couple of turkey breasts. Any of you done that before? I am excited to try it.

              combo smoke and deep fry this year. i've smoked and i've deep fried, but never done the combo. i too am excited to try it. just my little immediate family of 7, so if it sucks, not a big deal.

              • Eating with brother's family, across town. Far enough away that doing the turkey would be even more annoying than normal, and they offered to do it. Only today have I started getting wistful about it.

                • I thought we were going to have 8, but it turns out it will just be 5 immediate family members (my sister last week: "Oh, I forgot that I told you we were coming. We decided to go to daughter's house instead"). Not letting that change my plans though!

                  12 pound turkey -dry-brined, spatchcocked, and roasted
                  Turkey breast - Smoked
                  ABTs on the smoker
                  Deviled eggs
                  Sausage stuffing
                  Sweet potatoes
                  Cranberry sauce (homemade, duh)
                  Gravy
                  Parker house rolls
                  Brussels sprouts
                  Cranberry soda
                  Apple, Pumpkin, and Chess pies

                  Do we have any smoked turkey breast conversation on here? I usually do a whole turkey but have never done just a breast.

                    I don't recall ever smoking just a breast, but it shouldn't be too difficult. Do you own a sous vide? Join me in the experiment!

                      I just smoked 18 turkey breasts for the YSA Ward. It was the easiest way to smoke enough turkey without killing myself. I recommend low and slow. 225-250. How big is the breast?

                        I do, and that is tempting. But I would feel a little bad firing up the smoker just for ABTs.

                        Haven't bought it yet, so not sure. My plan was to keep it pretty simple.

                          Those little 3# butterball breasts are pretty juicy and easy to cook. This late in the game, it'll be eaiser to thaw out as well.

                          • My wife and I went to costco the other day and noticed a big pile of turkeys. But all I wanted was 1-2 breasts to sous vide, so we went to Smiths and they had bone-in turkey breasts (2) for $4/lb - $27 total. Entire turkey was $3/lb - $30 for a small turkey. Went back to Costco and bought and entire large turkey for $1/lb!
