Eggplant and Goat Cheese Sandwiches

  • Eggplant and Goat Cheese Sandwiches

    Make these.

    Bread:
    I used a boule-shaped Italianish bread from Smith's, sliced to 1/2 in. slices, brushed with olive oil, and toasted at 375 degree for seven minutes (flipping once).

    Eggplant:
    Also sliced to 1/2 in., dunked in egg and then bread crumbs, pan-fried in a little drizzle of olive oil for about 3 minutes on each side.

    Tomato Mixture:
    I dumped a can of petite diced tomatoes into a pan over medium, added in a few whole garlic cloves, a heavy pinch of kosher salt, and a swirl of sherry vinegar and reduced it about 20 minutes. Remove the garlic cloves.

    Assembly:
    I made these open-faced, piled on the eggplant, then a smear of tomato stuff, a dab of goat cheese, and a basil leaf.

    Eat fresh and enjoy.

    Yummy. Yet another thing I can do with the eggplant in my garden.
    What's to explain? It's a bunch of people, most of whom you've never met, who are just as likely to be homicidal maniacs as they are to be normal everyday people, with whom you share the minutiae of your everyday life. It's totally normal, and everyone would understand.

            I'm not a picky eater at all, but one thing I can't really seem to like it eggplant. Maybe I could substitute something as the recipe otherwise looks tasty!

                One thing that I think made a huge difference in this dish was using a good quality vinegar. In the past, I have always just bought what I can find in the grocery store for red wine vinegar or sherry vinegar. Last week at Caputo's, I decided to upgrade my wine vinegars. I asked one of the employees and he let us sample a couple of the vinegars. It is quite the experience to just shoot a couple of vinegars. We settled on a couple of really tasty vinegars, one a red wine vinegar and another a sherry vinegar. The sherry vinegar was very strong. I was also pleasantly surprised that it wasn't really that expensive for the upgrade. Both bottles were under $10 and although they are smaller bottles than the grocery store stuff, they are much stronger and we will use less.

                  That aside, the sherry vinegar I used was delicious.
