12 egg yolks
1/2 cup sugar
5 oz goat cheese
2 cups heavy cream
3/4 cups milk
zest from 1/2 orange & 1/2 lemon
1 t. vanilla
Beat egg yolks and sugar until light/fluffy then add the goat cheese, continuing to beat until well incorporated.
In a separate heavy sauce pan combine cream, milk, citrus zest, & vanilla. Bring to a boil then remove from heat and strain into a large mixing bowl. Slowly add the egg mixture while beating vigorously.
Skim foam, divide into ramekins, and place into a water bath. Bake at 200 for 2 hours (or until set). Remove and allow to cool. Then remove from water and refrigerate for at least 2 hours.
Carmelize sugar and garnish with papaya sauce: blend papaya, sugar to taste, and water until desired consistency is reached."You interns are like swallows. You shit all over my patients for six weeks and then fly off."

Hmmm. Mi wife and I LOVE Creme Brulee. We always order it if its on the menu, and in fact we go to some places just for it..
We ahve tried to make homemade creme brulee once and it didn't work out. I think we will have to give it a go again now that you have peaked my tastebuds..
I have tried a Chocolate creme brulee but it wasn't the same.. But I may like a dark chocolate version ot it...
