    Chimichurri wuapinmonense

    1/2 red onion
    6 cloves fresh garlic
    2 cups firmly packed parsley leaves
    1/2 cup olive oil
    2 tbps. red wine vinegar
    3 shakes of red pepper flakes
    1/2 tbsp of kosher salt
    The juice of one large lemon

    Put it all in the food processor until it makes a paste or add more vinegar/oil to reach the consistency you like. Enjoy!

    Made flank steak wuapichurri tonight. It was a hit. I marinated the flank steak for 4 hours in about half the chimichurri and then topped with the rest after cooking, resting, slicing. Delish.

    Mrs. D is really watching her fat intake since having her gall bladder removed a few months back, so I did a wuapichurri chicken breast for her. That was also very good.
    Prepare to put mustard on those words, for you will soon be consuming them, along with this slice of humble pie that comes direct from the oven of shame set at gas mark “egg on your face”! -- Moss

      I had a message pop-up on Facebook reminding me that it's been 11 years today since I had my gallbladder out. Tempus fugit.

        So about how long does this keep? I'd be making it for 1 person, as my son would never touch this.

            A week or so for regular flavor. You can let it go longer, but the fresh taste starts to wane after a couple of days, and it gets kind of boring (compared to fresh) after a week.

              Roasting a brisket for Friendsgiving tomorrow, along with a turkey. Making chimichurri tonight.

                    We love the waupichurri sauce in our house. When I make it, I make extra because my eldest loves to use tortilla chips and eat it like salsa.
