Whats cooking? July 4th Weekend edition...

So, what is everyone got cooking this weekend in celebration of Independence Day?

I am waiting on 4 whole chickens. 2 rubbed in the Apple Jerk Chicken seasoning, 1 with a pecan rub and one marinated overnight in Mojo Criollo.

Going to the folks when they are done. Sides will be roasted corn on the cob, potato salad and ranch beans.

I grilled some chicken in Corky's sauce. Hot dogs, homemade baked beans, fruit, green salad, coconut rice pudding. Nothing fancy but it was good.
What's to explain? It's a bunch of people, most of whom you've never met, who are just as likely to be homicidal maniacs as they are to be normal everyday people, with whom you share the minutiae of your everyday life. It's totally normal, and everyone would understand.

We just finished off some excellent filets, following the CUF-approved method of cooking (cast iron pan, three minutes a side, then into the oven for a bit more), baked potatoes, veggies, and a massive assortment of strawberries, raspberries and boysenberries. If I am ever to be executed by the state, this will be my final meal request.

We're off to a get-together with several families for desserts, an inspirational message, and blowing up a lot of stuff. I'm confident the Founding Fathers would approve of the day's observance.
