  • The First Day of School..Hot dog!

    Today was the first day of pre-school for our little dudes. It wasn't kindergarten, but they were still very excited nonetheless. They had their little backpacks, snacks, narcotics, etc....all prepped and ready to go.

    We dropped them off and I headed to work. My wife called me this afternoon and said everything was a wild success. I asked the kids what they wanted to do for dinner, by way of celebrating this milestone. They asked for hot dogs.

    I couldn't refuse them, so we are having hot dogs. I have decided to not let this get me down. Instead of going to the Coliseum, I am bringing the Coliseum to me. We are doing bacon-wrapped hebrew nationals.

    Here is what I am planning....

    1. Bacon-wrapped dogs on the griddle, not grill
    2. grilled onions and green peppers
    3. grilled jalepenos
    4. sliced tomato and pickle spear
    5. fried egg
    6. melted cheese

    these are mega dogs, a hybrid of the mexican bacon wraps from LA and some Chicago dog influence.

    I went from disinterest to anticipation. All of a sudden, I can't wait to come home and grill up our dogs.

    What other things do you guys put on your dogs? Also, any brand recs to check out? I am not a huge hot dog lover (except grilled Dodger Dogs, of course, and Pinks), so any recs would be appreciated.

      It's quite pedestrian, but my little girl loves the baked lil' smokies wrapped in pillsbury crescent roll dough. She likes helping to make them more than anything.

      I tried this last summer but completely screwed up the execution. They ended up a horrible mess.

        Are you alowed to wrap Hebrew nationals in bacon? I think there is some rule against that.

          This is why I am going griddle and not grill. Any good illegal alien will cook on their portable griddle, so I am going to go that route. Plus, you dont need the toothpicks for the bacon.

          My kids wont eat sauerkraut, so i will skip that one until they are older.

          Our kids love those little smokies, as well. They are tasty treats for them. we sometimes fire them up after Church as a quick mid-day snack before dinner.

              1. What kind of cheese?

              2. What kind of bun or bread do you use?

              3. How do you organize those ingredients within the bread? Can I get a schematic diagram?

              4. Fried egg is good on anything.

                  I enjoy pepperjack cheese when grilling because I prefer spice. Although gruyere is pretty awesome on burgers, so it could work here, too.

                  As for bun, don't know the brand name. I will take note and report tonight. The buns have to be generous size and I don't want sesame seeds all over them.

                  No CAD abilities here, but a rough description from bottom to top....

                  bun

                  condiment layer directly on bun...the mexicans use mayo at this point, so I may try it, although I am not a big mayo fan

                  dog is FLANKED by fried egg trimmed to fit down one side and 2 slices of tomato and 1 thin pickle spear going the length of the dog down the other side. All flanking must occur at or below bun level, if possible.

                  1 thin strip of pepperjack cheese...allow to melt

                  condiment layer...the mexicans now liberally apply ketchup and mustard, although I find ketchup on a hot dog to be ridiculous. Junkie is right, though. the kids love ketchup on hot dogs.

                  Top with reasonable pile of grilled onions and peppers.

                  Strategically place 1 grilled jalepeno on top of onions for presentation.

                    truthfully they will the dog out of the bun, chuck the bread, take a bite or two of the dog and then ask for an Otter Pop.

                          OK, so these turned out to be a big hit. One slight modification on the go.....we were out of pepperjack, so I shredded cheddar and mozzarella, instead. Still tasted nice.

                          I tried to get as close to griddle as possible, so I busted out the cast iron skillet to brown the onions and peppers and I used my cast iron griddle to cook the dogs.

                          First, a pic of the onions/peppers browning. I tossed the jalapenos in here at the beginning, but eventually moved them to the griddle to get a nice direct crisp going on. I coated them with olive oil pre-cook, btw.



                          Next up, prep and brown the hot dogs. I went with Nathans all beef. I was going to go Hebrew but I read online reviews today that were actually quite kind to Nathans, so I did those. Turned out well, although I think the Hebrews would also be just as good. Apologies for the blurry pics. I was in a rush and I am no photog. I should have had RobinFinderson come by and do a 360 panorama!



                          Next up, let dogs brown. You have to keep turning them every few seconds so they don't burn on any one side. The bacon cooks FAST on the cast iron griddle. I also have now moved the jalapenos over to do their own thing, away from the crowd and noise of the skillet.



                          Remove the wrapped dogs. The peppers and onions are now done and keeping warm. Now I start to stack the bun. I used potato buns because I like soft bread, not hard bread. But there isn't a great variety for buns. I was satisfied, but ultimately would prefer a larger bun, esp given the size of the dogs. At this point, I have done most of the work below the bun-line. This includes fried egg, pickle spears, and tomato slices.

                            This is the final product. Adding the warm peppers and onions helps melt the cheese pretty quickly. Top off with ketchup and mustard and then let a nice jalapeno sit on top. A meal fit for just about anybody that isn't vegan or vegetarian. All in all, a solid first day of school.

                              Nice write up. Sounds good minus the tomato, pickle, onions, and peppers. I'm a picky eater. And I'd take a Nathan's dog over Hebrew National any day of the week.
