  • Super Bowl eats

    I thought there was a thread last year about Super foods, but I can't seem to find it. This years SB is going to require some planning on my part as we will be hosting about 20 people.

    I have learned much from DDD's hot wing thread. Other thoughts and suggestions would be appreciated and enjoyed.

    I can't speak for Indianapolis, but New Orleans themed foods like beignets and creole would be awesome.

      A buddy of mine has an incredible queso dip. By far the best I have ever had. I will get the recipe and post it. It has become a must have when we get together for sporting events.

      EDIT:

      1 lb sausage
      1 lb hamburger

      browned together

      1 32 oz box of Velveeta
      3 cans of Rotel tomatoes

      Melt Velveeta on stove top, then add Rotel and meat. Let simmer for about 10-15 minutes before serving!


      Very simple but it is so good.

          I've had a variation of this....except all sausage, no hamburger. Also, add jalapenos.

          yum.

                I think I posted my spreads. 3 years ago I did a Sandwich Super Bowl Spread. It was such a hit, I just continue to do it.

                Breads from a local bread shop, eg Shirleys

                Sourdough
                Sub Rolls
                Wheat
                A specialty or two

                Meats,

                Hand Pulled Turkey
                Ham
                Hard Salomi
                Roast Beef
                Pastrami
                Fresh cooked thick cut peppered bacon

                Cheeses

                Havarti
                Pepper Jack
                Munster
                Swiss
                A nice Cheddar

                Fixings

                Mayo
                3-4 Mustards
                Oil & Vinegar
                Onions
                Bell Peppers
                Olives
                Green leaf lettuce
                Jalapenos
                Tomatoe
                Avacado
                Sprouts
                Pickles, my fave widely available are Claussens

                salt
                pepper

                Toasted if you want.

                Last year, I made a sandwich my way on a full loaf of french bread. I ate about half.

                  I've made a variation of this several times:

                  2 lbs Jimmy Dean sage sausage
                  1 block of Velveeta
                  1 red onion
                  1 red bell pepper
                  1 yellow bell pepper
                  3 or 4 cans of no-bean chili*
                  Tapatio red pepper sauce

                  Enjoy with Fritos scoops

                  *Nikuman's chili would be 5x better, but mine is designed to be a quick fix. After browning the sausage, basically cut everything else up and dump it in a crock pot. Always a crowd pleaser.

                    Artichoke Dip

                    1 Can of Artichokes
                    1 Can of Green Chiles
                    Handful of Grated Mozzarella
                    Handful of Grated Cheddar
                    Couple spoonfuls of Cream Cheese
                    Couple spoonfuls of mayo
                    Several grates of parm

                    OPTIONAL:
                    A package of frozen spinach; rinsed and drained
                    Diced sun-dried tomatoes

                    Cut up the artichoke and put in a bowl. Add all the other stuff and mix. Put in a baking dish and bake at whatever until it looks done, probably about 30 minutes. Eat with chips, preferably Baked Scoops.

                    Pepper Bruschetta

                    1 or 2 Red/Orange/Yellow Bell Pepper
                    1 Green Pepper
                    Half a Red Onion
                    Couple of cloves of garlic
                    Sliced Provolone cheese or whatever kind your prefer
                    Olive Oil
                    Loaf of crusty artisan bread, thin sliced

                    Julienne the peppers and slice the onions super thin and dice the garlic. Saute it all in OO until you think it's done, I like to keep mine a little crisp. Feel free to season with whatever else you have in your spice cabinet, some dried oregano helps. Set to the side. Grab another clove of garlic and rub on the bread. Brush a little OO on the bread as well. Toast in the broiler for about 30 seconds, until it starts getting medium brown. Don't flip it over (the bottom won't be toasted, but it will help keep it so it's not so crumbly). Take out the toast, put the cheese and the pepper topping on the toasted side. Put it back in the broiler for another 30 seconds to melt the cheese. Eat it while it's hot.

                      Another bruschetta-type appetizer:

                      1 tub of ricotta cheese
                      1 or two heirloom (or whatever kind you like) tomatoes
                      Handful of green olives
                      Handful of kalamata olives
                      Handful of black olives
                      Olive Oil
                      Garlic clove
                      Lemon

                      Chop and seed the tomato. Dice the olives. Mix all of that in with the cheese. Press the garlic and mix it in a small bowl with the oo. Lightly brush on both sides of the bread. Grill the bread on both sides. After your done grilling, squeeze a little lemon on the bread. Top with the cheese mix and eat.
