    Real Barbecue

    Regardless of what anyone says, real barbecue does not take place at a restaurant. It happens in your own backyard, with your own smoker, and with your own rub and sauce.

    That being said, here is a pulled pork sandwich (attached) I recently made. This was my second pork butt (I usually do ribs or brisket) and it turned out so much better than the first. Oh, and the slaw on the pork was homemade by Mrs. Jones.

    I smoked again this past weekend. Thought I'd put up some pictures of the delicioius food my family ate on Saturday night:

    Here's a typical brisket. I forgot to get a picture before cutting it open (Mrs. Jones dropped a jar of molasses so things were hectic) and this picture is actually about an hour after cutting into it so the smoke ring is a bit faded. It was delicious and we are having chopped beef sandwiches the rest of this week.


    BBQ Beans with Brisket Burnt Ends. This was a new recipe and it turned out great. Putting the burnt ends into the beans livened them up a bit. I'll tweak the recipe a bit next time to get it a bit darker and hopefully add even more flavor. I'm tempted to try some beer in the beans as I think a local BBQ place does that (at least I can taste something like beer or at least what beer smells like).


    Homemade peach pie. We served this up warm with a big scoop of Blue Bell Homemade Vanilla Ice Cream. It was of course delicious. Fruit pies are Mrs. Jones' speciality.


    If anyone is ever in Houston, let me know and we'll throw some meat on the smoker for you.

      Looks insanely good! I take that back, it looks good except for the beans. Baked beans are gross, yuck!

        The beans look good. You need to post the recipe.

        While the peach pie looks delicious I am very much a pecan pie man (best cooked with Jack Danniels). The Homemade Vanilla Blue Bell always puts it over the top.

        I have never been a slaw fan until I tried it on a pulled pork sandwich. I am convinced that is the way to eat it now.

          I am not a slaw fan...at all. I do like it on the pulled pork sandwich. I also enjoy it on the Backyard Burgers Blackened Chicken Sandwich. Same concept as a pulled pork but with a blackened chicken breast. It is amazing and the key ingredient that kicks it off is the slaw.

          FYI, my mom makes the best baked beans.

              I never understood the slaw and bbq connection until I visited Memphis for the first time and was introduced to slaw on my pulled pork sandwich. Yumm.

              And Backyard Burgers! I love that place. Wish they had them out west.

                I give mad props to anyone who can do brisket well. It takes dedication and a lot of attention.

                The window for good brisket is very narrow. Too short a cooking time and it's like chewing on a belt. Too long, and it falls apart to nothing.

                I do fantastic pulled pork (10 out of 10) (I've honestly never had better), very very good ribs (9 out of 10), a mean smoked salmon (8-9), and pork loin or turkey breast are also both in the 8 - 9 range. All of the above are at least as good if not better than what I've ever had at a restaurant.

                But brisket is tough. Mine's a highly variable 5. One time I'll get it just right, and it's a 10. The next time, it'll be an overcooked 5. The next, an undercooked 1.

                the one redeeming grace for brisket - or any pork bbq - if you screw it up, you can always throw it in a crock pot and cook it till it's mush - which is what most places try to pass off as pulled pork or chopped brisket that they'll serve on sandwiches. You can always use poorly cooked bbq to flavor beans and other dishes - turning them from meh to very good. So it's not a total loss. But a screwed-up BBQ attempt, if not a toal loss, is still discouraging.

                But I still have to give props on mastering brisket. She's a demanding master...

                    14 hours until pulled pork goodness!! It'll be ready for the BYU/Wyoming game as well as the LSU/Auburn game. Go Cougars and Geaux Tigers!

                            The beer in the baked beans is a good idea -- that's how my wife makes them. Since we moved to Utah, she sends me out to buy the beer. I guess she doesn't want to be seen by anybody from the ward.

                              The boston butt is the top half of the shoulder. Bottom half is called the picnic. I usually do a whole shoulder - one of each - but if I have to pick just one, I'd go butt over picnic. It's fattier, but if you're smoking, that's a good thing...
