    Tuna Recipes

My son just returned from a trip where they spent a day on a charter boat and they caught several hundred pounds of yellowfin tuna. Any suggestions on how to cook it? We have lots of frozen tuna steaks in the freezer.

    No tuna casserole jokes please.

This is my dad's recipe. It's very simple and delish.

Season both sides of the steak with coarse ground pepper, cayenne pepper and cumin. Just before you throw the steaks on the grill, squeeze a generous amount of lime juice on both sides of the steak.

Then grill it until you want to eat it. I like to really sear the outside of both sides but not too much so the inside is barely cooked. It's kind of like when you are cooking a steak to medium rare - you just know when it's done. (But tuna cooks quicker than beef so be careful.

      Enjoy!

To be honest I have no clue. I don't think there is an official way to determine whether it is or not. I know I have looked at some fish and can't tell the difference between the regular tuna and the sashimi grade tuna. Except of course the price.

All it means is that the tuna is high quality and can be used raw. From what i've red, there is no official conclusive definition. The fish is graded on fat content, color, and freshness with grades 1,2 and 3 but it is a subjective rating. There is no official government standard like there is beef.

Usually sushi or sashimi grade tuna has good color, good fat content and is not stringy/fiberous. I would assume if it was fresh caught and immediatly frozen, you could use some for sushi/sashimi

                two 1½-inch thick tuna steaks
                2 tbs olive oil
                2 tbs soy sauce
about 1 tsp fresh ginger (or ½ tsp dry ginger)
                1 tsp minced garlic
                5-6 sprigs of fresh cilantro
                wasabi paste to taste
In a mortar add the ginger, garlic, and cilantro. Smash into a fine paste using a pestle. Add oil, soy sauce, and wasabi and thoroughly mix to combine. In a ziploc bag place the tuna steaks and the sauce, marinate several hours or overnight.

Prepare the grill. Ignite the grill burners and turn to the highest setting. Place a piece of aluminum foil over the grill, leaving about ½-inch gap on either end. Close grill and let stand for about 10-15 minutes; this will superheat the grill plates (mine turn white hot). Scrape grill thoroughly and spray grill plates with PAM or brush with a paper towel drenched in olive oil. Immediately place tuna steaks on grill. Sear each side for 2-3 minutes. Remove from grill, slice, and serve with sushi rice and steamed veggies. Picture attached.

                Enjoy!

                cheers.
Looks good. Thanks. I may try that.

Our Japanese friends have volunteered to come over and have a sushi party. They claim that you have to thaw it out just right or the flavor will be messed up.

I think I've watched this movie at least five times tonight. How hilariously awful.
