        Smoking a turkey is fraught with peril.

        Make sure you take your temperature readings from the dark meat. Undercooked dark meat can leave you spending the better part of a night and day on the bathroom floor.

          Better yet, monitor both. Cook the breasts to 165 and cook the thighs/legs to 180. Last year I just cut off the thighs/legs once the breast hit time and put them back on the smoker until they were done. Worked great.

            No kidding. I am going to need to eat a ton of soggy turkey to make up for all the dry turkey I have suffered through over the years.

              Am I reading these USDA charts correctly? It looks to me that salmonella is effectively killed at 150 degrees internal temperature held for 4-5 minutes (depending on the fat content of the turkey). Alternatively, looks like it only has to hit 165+ for 10 seconds.

                I honestly don't know why refined gentlemen like those posting here would settle for turkey on the day of the celebration of all our bounty. I am going to hammering some prime rib on T-day. Maybe if Thanksgiving were about remembering the poor and lowly would it be acceptable to eat the meat that is on the bottom of the totem pole of delicious meats.

                    If my last couple of years can be extrapolated, brining hideth a multitude of smoking errors. It just seems like I can get away with not monitoring the temp as carefully as before.

                    I'm curious if others here have noticed the same thing.

                        Did 50# of turkey for 30+ guests. Brined overnight then rub with salt/pepper. Butter and herbs under the skin. Cavity stuffed with lemon, apples, and herbs.


                        Smoked with apple pellets (2.5 h smoke, 3h at 325). With the cold and wind it was a bit slow to cook so I finished them for another hour in the oven.


                        Excellent flavor and texture. Very moist.
