          Just went again tonight...we had the frisee/apple/pork belly salad; a starter plate with bread, meat from Caputos, house ricotta, squash caponata; a perfect skirt steak with gremolata butter; acorn squash with apples and thyme; and polenta with caramelized onions. All were very well executed and tasty. I talked to the chef about the sous vide preparations they do for the different proteins, and asked as well about how they make the squash and the polenta (which was amazingly creamy).

          We also had the pear pandowdy, which was in-sane-ly good.

          I'm liking this place more every time I go back.

              that looks interesting and pretty tasty, esp since I am starving and not leaving for lunch for another 15 minutes. we should have gone there over Thanksgiving. looks like it is worth the visit.

              What is airline chicken? I wouldn't associate my food with airline food.

                Let me know next time you are in town and CJ, you and whomever, can make a date of it.

                The airline chicken is just a very simple dish. Not much to it(which is where I think the name came from), but insanely good and it almost melts in your mouth.

                      I wonder how many local folks grouse that they have to pay $17 for a pork chop, but it doesn't even come with mashed potatoes or a salad. My MIL always makes a comment when we take her to dinner because the meals are ordered a la carte. It reminds me of the people on the spaceship in Wall-E....some folks want their food as conveniently as possible. They want their menu to list entire meals, not individual items. I guess the assumption is that every meal should include potatoes and green salads.

                      U-Co's need to appreciate a place like this. Too few and far between for a place the size of Utah. In all seriousness, how many places in Provo even make/sell polenta?

                          That's the thing...here in UT (SLC/UT County) we're seeing more and more places like this pop up and actually survive/thrive, suggesting Utah might finally be ready for some actual good eats. But they have to keep the prices reasonable--which means compared to other similar places in other locales, dowright cheap.

                          Hence you have a place like Forage in SLC offering a tasting menu for $79 that for all intents and purposes might as well be the identical menu from French Laundry, which of course is a few more Benjamins.

                              I don't think I am ready to go down that route, as of yet, but I am certainly happy with the influx of good eats that are coming in.
