There are hiking guides in the Himalayas from all sorts of cultures -- many of them are from the Sherpa culture. I would imagine that using the term "sherpa" to describe a hiking guide is a result of the original Everest hikers referring to their "Sherpa guides," much as if they had said their "Chinese guides" or their "African guides." Sherpa then became a general term for a hiking guide.
