So I've heard one single-space page read out loud translates to about five minutes - does that sound right?

My advice is to practice it a couple times, trying to slow yourself down (the natural tendency is to rush) and time it. I'm not sure you can generalize about it form person to person. But 5 minutes sounds very high for reading one single spaced page.

You should never single space a page you intend to read for a presentation. I'm guessing that wuap's number is based on that. Most conferences I go to allot 20 minutes for each speaker. I usually prepare about 8 pages, definitely no more than ten, and fewer if I'm including video clips. I nearly always come in right on time. I wish more of my colleagues understood this as most of them go over time, leaving nothing for discussion.
